高考菜谱:几种营养汤做法

1.鳝鱼猪肝汤:鳝鱼、猪肝各250克,枸杞子20克。此汤可补脑,益智,壮骨。尤其适合高中学生食用。

材料:鲍鱼、鸡高汤、肉排汤、大骨汤、胡萝卜丝50g、几个葱段、一片姜、细粉丝50g、蚝油。做法:

1、冲洗干净后,挂净它身体上面类似舌苔一样黑颜色的东西。

2、把平时准备的鸡高汤、肉排汤、大骨汤混合,加热,加50g的胡萝卜丝,几个葱段、一片姜。

3、汤开后,加50g细粉丝,调蚝油。

4、汤滚后,捞出葱姜,入鲍鱼文火20分钟。转小火1小时,捞去表面的浮沫。

5、最好放置一夜,让鲍鱼有个吸收汤汁过程。十几个小时后的鲍鱼颜色转金黄,肉的里外色泽一致就可以吃咯。外面的通常是人工加色,到客人点食时再给鲍鱼加热、埋芡和泼汁。如此看来,食必躬亲自然来的放心多咯~~~~~

红烧鲍鱼

配料:鲜冬笋(竹笋)250克,熟火腿(金华火腿)100克。

调料:绍酒、酱油、精盐、味精、白糖、猪油、鸡油、玉米粉、奶汤、葱、姜、蒜。制作过程:

1、每个鲍鱼都撕去毛边,两面剞成花刀,再片成两片;竹笋中含有较多的草酸,烹调前要沸水焯处理,以去除草酸;熟火腿均切小骨牌片;葱、姜、蒜切成指甲片。

2、油锅置火上,下入底油(猪油);油热时,将葱片、姜片、蒜片略 煸,依次下入酱油、奶汤、冬笋片、熟火腿片,烧沸后用精盐、绍酒、白糖、胡椒粉调好口味,再放入鲍鱼,烧至入

味后,用玉米粉勾芡,加入味精搅匀,淋些鸡油,即可出锅装盘。

明,鲍鱼有抗肿瘤作用。竹笋具有吸附脂肪、促进食物发酵、加速排泄之功效,所以常食竹笋对单纯性肥胖者大有裨益。此菜搭配能滋阴益精、清热利尿。适用于阴虚内热引起的体热、干咳,对白内障有一定的疗效。

特别提醒:

4、为了节省能源,可以同时串上几串蔬菜串一起烤,蔬菜串上刷油、撒胡椒粉、盐调味;

5、各家烤箱功力不同,原则上只要看到鱼身微焦、刀口裂开即

可;

6、没有烤箱,用平底锅小火干煎也是可以的。

自家DIY的盐烤秋刀鱼

原料:秋刀鱼、盐、黑胡椒碎粒、柠檬汁。做法:

1、秋刀鱼去除内脏鱼腮,洗净沥干;

2、用盐抹在秋刀鱼上,并洒上少许黑胡椒碎粒、加些柠檬汁腌30分钟左右;

3、用水冲干净鱼的表面(腌制后会有血污),用刀在鱼身上划几刀;

4、烤箱预热250度。烤盘垫锡纸,并

涂抹一层油,将腌制好的秋刀鱼排放在烤盘上;

5、再在鱼身上洒些盐,烤15-20分钟至表面金黄(中间翻一次面),取出滴

上柠檬汁即可。秋刀鱼的滋味

材料:秋刀鱼、姜、葱、蒜、糖、盐。做法:

1、洗干净鱼,用姜葱蒜、糖、盐淹30分钟~

2、热锅温油,放入秋刀鱼~

3、中小火三分钟,翻个身~

4、鱼身每面各翻两次,就OK了~

5、撒点芝麻在烤好的秋刀鱼上~ 搭配上米饭就可以吃咯~~味道鲜极了。

柠香煎秋刀鱼的做法

个人口感:

柠檬的清香渗透到鱼肉中,没有其它调味料的添加,使鱼肉本身的味道更加清新。

材料:秋刀鱼3条、柠檬4分之1个、盐3克。做法:

1、秋刀鱼洗净,去鳃,用一根筷子伸入鱼肚内,搅一下。

2、取出鱼的内脏,冲洗干净,擦干鱼身。在鱼身上适当的划几道。

3、把盐均匀的涂抹在鱼身上,腌制5分钟左右。

4、锅里放底油,8分热左右放入腌制好的秋刀鱼。

5、煎至一面金黄,翻面,继续煎至另一面金黄。趁热淋上柠檬汁。后记:

1、鱼的内脏不要像收拾其它鱼一样,破肚去除,会影响口感。

2、煎鱼时的油温一定要稍热一些,鱼皮不容易破。

3、淋柠檬汁除了会使鱼肉更美味,还有去除鱼腥的作用。红烧秋刀鱼

原料:

秋刀鱼、葱姜、肉馅。

做法:

1、秋刀鱼去肠洗净,切成几段,葱姜切末;

2、平锅热后煎秋刀鱼,两面金黄即可;

3、用老抽白糖干煸一下肉馅(我这里是

前一天炸的酱,所以用的现成的);

4、另支锅把葱姜大料爆香,放入煸好的肉馅,秋刀鱼,加水红烧;

5、期间放一点五香粉和老抽,直到水分烧干为止。

竹笙鲍鱼炖鸡汤

原料:

活鲍鱼2个、土鸡半只(约250克)、湿竹笙120克、姜2片、水1200毫升。调味料:

绍兴酒少许、盐适量。做法:

1、将竹笙泡水30分钟;

2、将鲍鱼洗净后备用;

3、将土鸡切块后氽烫,捞出备用; 特点:

4、把所有材料放入炖盅内,加入绍兴活化肌肤,补充营养。酒及热水炖煮2小时,起锅前加入盐小贴士:

调味即可。

处理新鲜鲍鱼,最方便而省力的方法是将鲍鱼放在砧板上,磨除其底部污垢,然后清洗干净即可。

泡水30分钟→洗10分钟→切3分钟

→氽烫10分钟→炖煮120分钟→调味1

分钟→盛碗1分钟。

韩式海鲜煲图解做法

烹制方法(四人份)材料:韩国泡菜(175克,1袋),黄豆芽(750克)、白贝(2两)、鲜鱿鱼(2两)、罗氏虾(7两)、生蚝(3两)、姜(4片)、姜蓉(1汤匙)

调料:油(3汤匙)、酱油(1/2汤匙)、鲍鱼汁(1汤匙)、胡椒粉(1/5汤匙)、盐(1汤匙)、糖(1/4汤匙)工具:瓦煲(1只)

做法:1 黄豆芽去根,清洗干净;将生姜去皮切成4片,剩下的剁成姜蓉; 将白贝泡在清水里待用;罗氏虾剪去虾须后洗净。鱿鱼洗净切成圈,加入1/2汤匙姜

蓉、1/2汤匙酱油、1汤匙鲍鱼汁、1/6

汤匙盐和1/4汤匙糖拌匀,腌制5分钟。生蚝洗净,洒入1/2汤匙姜蓉、1/6汤匙盐和1/5汤匙胡椒粉拌匀,腌制5分钟。烧热瓦煲,放3汤匙油,爆香姜片,撕开泡菜封口倒入泡菜翻炒两分钟,倒

入1/2瓦煲的清水,将洗好的黄豆芽放进瓦煲,加盖大火煮沸。依次放入罗氏虾、白贝、鱿鱼圈及生蚝,加盖大火焖煮8~9分钟,待煲里的白贝开口后,加1/5汤匙盐调味,即可上桌咯!

厨神贴士

1、生蚝洒少许胡椒粉和姜蓉,可起到去除腥味的作用。

2、袋装的韩国泡菜有大有小,大包装里有半颗白菜,最好先切成段再下锅,吃时夹取比较方便;小包装则不用。韩

国泡菜本身已有咸味,海鲜煲煮好后,加少许盐味便可。

3、白贝的外壳和肉都是白色的,其肉质鲜美,煮汤清炒两相宜。建议白贝下锅前,先用清水泡一晚,让它吐干净沙子,吃起来就不嗑牙了。

4、黄豆芽是黄豆所发,绿豆芽是绿豆所发,两者味道不一样,绿豆芽较嫩,吃起来清淡爽口,适宜炒着吃,黄豆芽较硬,适宜做汤喝。

5、去豆芽皮的方法:将豆芽用水浸泡一段时间,豆芽皮就会鼓起来,只要轻轻一挤,豆和皮就会分开了,或用热水焯一下,豆和皮自然就分开了。清蒸平鱼

原料:新鲜平鱼一条(最好是活鱼)。

配料:李锦记蒸鱼豉油、色拉油、葱丝、姜丝、青红辣椒丝各适量(俺没有红辣椒用了胡萝卜丝代替)。做法:

1、将鱼宰杀清洗干净去内脏,在鱼身上切菱形刀块。

2、取一个盘子,盘底铺上葱姜丝将鱼放在上面,然后在鱼上面也放上葱姜丝。

3、蒸锅烧水,水开后将处理好的鱼放进蒸锅,大火蒸8分钟出锅。

4、拿掉鱼身上已经蒸熟的葱姜丝,在鱼上摆上新鲜的葱、姜、青红椒丝。

5、将李锦记蒸鱼豉油放到小碗里在微波炉里加热,然后浇在鱼上。

6、最后将色拉油烧开浇在鱼上即可。马师傅教您5分钟就能做出酒店级黄金大虾

原料:

大对虾2只、鸡蛋2个、生菜若干(装饰用)、香菜梗数根。

做法:

第五篇:年夜饭菜谱

自制Majito 材料:薄荷、砂糖、黄柠檬、青柠檬、朗姆酒、苏打水、冰块

1.柠檬切成月牙状 2.薄荷叶加砂糖捣碎

3.黄柠檬和青柠檬挤出汁,然后一起放杯中

4.大蒜捣成蒜泥,加入香油、生抽、淋到白肉上即可。5.我用打皮刀刨了黄瓜片包裹在肉上,让白肉更爽口。

1.小锅里放水,放点油、鸡精、盐,煮开 2.把菜心放里面焯熟,然后沥干水备用

3.小碗把调蒸鱼豉油、水调成甜酱油汁,浇在菜心上

百合鱿鱼卷

材料:鱿鱼、干百合、绿椒、大蒜、姜、香葱、红椒、水淀粉、白胡椒粉

1.将鱿鱼清理干净,平放在案板上,右手用刀按住鱿鱼,左手使劲撕掉小尾巴在小尾巴的部位揪住皮,使劲撕,鱿鱼皮就能大面积的撕掉了。2.鱿鱼内壁朝上,先按四十五度切出一道道平行的花纹,切到肉厚的四分之三处就可以了。3.然后根据刚才的平行花纹,转九十度继续切,切出十字花刀。(切好十字花刀的鱿鱼)。4.把切好花的鱿鱼片分割成你想要的大小,鱿鱼的触手切小段备用。5.鱿鱼入沸水烫三十秒,漂亮的鱿鱼花就卷成鱿鱼卷了,捞出沥水。6.把万字酱油,盐,糖,白胡椒粉,水淀粉在碗中调匀。

7.干百合用水泡开,红绿椒分别切成小块。蒜姜切片,香葱切小段备用。8.锅中热油,大火将蒜姜片爆香,然后入红绿椒和百合翻炒数下。9.放入鱿鱼卷,快速翻炒几下。10.倒入调好的酱汁。

11.炒匀后,撒入葱段,关火即可。

清蒸鲟鱼

材料:鲟鱼,葱姜,料酒,花椒,盐,蒸鱼豉油 1.鲟鱼让卖家杀好,回来清洗干净血和粘液,(因为此鱼鱼骨在外,表面粘液又多,所以最好带个手套别伤了手,表面粘液可用刷子刷一下)

2.清洗好的鱼身两侧打花刀,抹适量盐和料酒,鱼腹中塞入葱段和姜片,腌制三十分钟左右。

3.蒸锅加水先烧开,将腌好的鱼上锅蒸制8分钟左右,取出,捡出葱姜,沿鱼身倒入2--3勺蒸鱼豉油。如果味道够,生抽就少加,如果味道淡,可多加点儿生抽 4.鱼身表面撒葱丝,5.炒锅中加入2--3大匙植物油,炸香花椒粒后与油一起顺鱼身浇下即可食用。6.鱼肉剖开,皮下有一层黄色,是鱼油?蒸好之后的汤金黄金黄的,鲜的不得了

鲜虾土豆饼

材料:鲜虾8支、土豆2个、面包糠50g、鸡蛋1个、盐20g、黑胡椒1g、白胡椒1g 1.土豆去皮切块、蒸熟、用筷子扎透 2.鲜虾去头、虾腺

3.土豆蒸熟后,趁热捣成土豆泥,加入盐、黑胡椒、白胡椒,拌匀后分成8份

4.待土豆泥稍微冷却不烫手了,用手取一份土豆泥搓成椭圆形,用手指在中间按一个凹槽,把虾放在里面慢慢包裹好备用 5.把裹好的胚在蛋液里沾一下 6.在放入面包糠中裹满面包糠 7.烤盘垫不粘油纸张,地底部刷少量油,把做好的鲜虾胚子码入烤盘内,烤箱预热200度,中层15分钟

手抓羊肉

材料:羊排、料酒、花椒、八角、干辣椒、陈皮、葱、姜、蒜、生抽、香油、辣椒

1.选择上好的羊排肉,最好是肥瘦相间的,羊排切开,切完之后洗白白 2.热水烧开,把切好的羊排下水过一下血沫,捞上来

3.重新做水烧开,放入羊排大火烧开后转中小火,加入料酒、花椒、八角、干辣椒、陈皮、葱姜,4.炖两个小时左右,加入适量盐,再炖半个小时,就可以出锅了

5.汁的方法其实很简单,把姜和蒜切碎了加入六月鲜生抽,再加入一点点香油和辣椒就OK了

小鲍鱼焖排骨

材料:猪小排、鲍鱼、花生油、盐、葱、姜、蒜、八角、桂皮、生抽、老抽、香油、白糖、江米酒、水 1.小鲍鱼取出清洗干净,表面像切鱿鱼花一样打上三分之二深花刀(千万别切断),排骨冲洗干净,然后放入清水里净泡30分钟,中途翻动几次,泡出血水捞出

2.锅里放入适量的清水,加入1汤匙米酒,放入排骨,然后用清水洗净排骨表面的浮沫,锅中放油爆香大葱、姜片和蒜瓣

3.放入排骨煸炒至表面微焦黄,加入小鲍鱼,淋入1汤匙米酒

4.再放入生抽和糖煸炒,倒入铸铁锅,放入八角和桂皮,加入没过排骨的开水

5.大火煮开后,盖上锅盖,调小火焖煮30分钟左右,然后开盖大火收汁,此时可根据个人口味加盐、白糖或老抽上色,临出锅前淋入几滴香油提色增香

6.排骨一定先要泡水,再要出水,这样才能将骨头的血水逼水,更好地去除腥味,出水的时候放点米酒有去腥的作用;

7.加入大葱会让这道菜更香;煸炒排骨和小鲍的时候,加入生抽和糖一块去炒,会让排骨和小鲍上色更漂亮;

8.开水没过排骨表面即可,不要加多了,如果放多了,30分钟后可以倒出来一些,再大火收汁;

缤纷开边虾

材料:海虾、彩椒、香葱、盐、油

1.海虾去除虾线,用剪刀从虾尾往虾头方向剪,不要剪穿; 2.彩椒切成碎粒,香葱末,用一点点盐腌一下,填入虾背内;

3.平底锅放底油,虾一个个码好,中小火煎,虾稍微变色的时候加入一小勺开水,盖盖子焖1分钟;

雪豆蹄花汤

材料:猪蹄半只、干雪豆250g、姜2片、料酒、香醋、盐

1.猪蹄、雪豆备好(猪蹄买来已经剁块,收拾干净的)。

2.猪蹄洗净,放入煮锅里加入适量的清水,再放入姜片和料酒。3.大火煮开后继续煮五分钟,煮出血沫。

4.猪蹄捞出用清水洗血沫,再次检查一遍,拔去细小的毫毛。5.将雪豆洗净,加入适量清水隔夜浸泡,清洗沥干水份待用。

6.把焯过水的猪蹄、泡发好的雪豆和姜片放入汤煲内加入适量清水,7.再放入一汤匙香醋(有利于骨头中的钙质稀出到汤中)。

8.烧开以后保持大火状态烧20分钟,打去表层的浮沫,直到汤汁发白,然后转小火煲约3小时。

9.至猪蹄酥烂,放入盐调味,撒上葱花装饰,可根据自己的口味调蘸水(用酱油、醋、香油、辣椒油、花椒粉、葱花调成蘸水)

豌豆黄

材料:豌豆250g、白糖50g、黄油

1.去皮豌豆加二倍的水浸泡一夜

2.泡好的豌豆放入容器隔水蒸30分钟左右 3.蒸好后的豆子用手轻轻一捻就会变成粉末状

4.把蒸好的豆子放入料理机加少量水打成非常细腻的泥状 5.打好的豆泥倒入锅中,加入白糖

6.小火不停翻炒至出现明显纹路,且纹路不易消失 7.取一个保鲜盒,里面涂薄薄的一层黄油 8.倒入炒好的豆泥,轻摔几下使豆泥平整 9.盖好盒盖,入冰箱冷藏几小时 10.取出倒扣切块即可

糯米桂花藕

材料:糯米、藕、红糖、红枣、冰糖、糖桂花 1.先将糯米用水浸泡1至2个小时

2.糯米泡好后,开始准备藕,把藕皮削掉清洗干净,一端切开一个盖子 3.用筷子把糯米填到藕里,糯米要塞满压实 4.用牙签把切下来的藕盖子封口固定

5.把藕放到电饭锅里,加水没过藕身,放入适量冰糖(或红糖),再放几粒红枣,可以上色味道也更好,大约煮2个小时左右就可以了

6.糯米藕煮好后,在锅里多浸泡一会,等汤晾凉了再捞出 7.切片摆盘,将糖桂花淋在糯米藕上

玫瑰花饼

材料:低筋面粉125克、黄油60克、鸡蛋25克、糖粉20克、玫瑰花瓣适量

1.黄油室内软化,用打蛋器简单搅拌。

2.糖粉分三次加入黄油中,并将黄油打发略成白色。

3.蛋液分三次加入略成白色的黄油中,每加入一次要搅拌均匀再加入第二次。4.低筋面粉过筛,倒入黄油中,拌入玫瑰花瓣,和成面团,不要揉过度。5.面团分成10克一个的圆球,放入不粘烤盘中,用叉子将面团按扁。6.烤箱预热180°,20分钟即可。

白切猪肝

材料:猪肝、料酒、蒜蓉、生抽、白糖、香油

1.猪肝在流动的水下反复冲洗干净,入锅,放水没过猪肝

2.放一汤匙料酒,中火煮开后,撇去浮沫,转小火慢煮40分钟

3.关火开盖,等猪肝凉后,把猪肝从汤水中取出,用快刀切成薄片,摆盘 4.用蒜茸,生抽,白糖和香油调成味汁,吃的时候蘸味汁食用 5.煮猪肝时要用小火慢煮,大火容易把猪肝煮出很多大的空洞

珍珠丸子

材料:猪肉、糯米、鸡蛋清、料酒、油、生抽、盐、香葱

1.糯米提前用冷水浸泡5小时以上,浸泡好的糯米装菜篮中沥干水份

2.在肉馅中先加入料酒调拌均匀,然后加入鸡蛋清顺着一个方向拌均匀,等鸡蛋清与肉馅完全混合后,加入生抽、盐、油搅拌均匀

3.用勺子将调好的肉馅做成一个个丸子形状,然后放入装有糯米的篮子中 4.将丸子全方位滚上一层糯米

5.拿起滚好糯米的丸子,放手掌心中来回晃动,直至滚圆,做好的丸子放蒸锅隔层上 6.所有丸子做好后,蒸锅上烧水,水烧开后,放上蒸隔层,蒸25分钟即可 7.丸子熟后,散点香葱,出锅。

烤羊排

材料:羊排、酱油、料酒、葱、姜、孜然、辣椒、生菜

1.倒入酱油、料酒等腌制羊排,不用放盐啦,用刷子涂抹均匀,最好再放上葱姜,腌好后放冰箱里腌十个小时。

2.腌好后。撒上孜然和辣椒,用锡纸包好。3.放在烤盘里开始,200度,1小时。

4.1小时后,打开锡纸,在放进去烤20分钟,配上生菜叶子就ok了。

粉蒸排骨

材料:糯米、大米、排骨、料酒、白胡椒粉、花椒、郫县豆酱、老抽、生抽、豆腐乳、土豆

1.圆糯米、大米,1:1的比例,小火炒至微黄离火,等米冷凉以后用搅拌机打磨成粉。2.肋排一斤,洗净后用料酒、白胡椒粉、花椒粒腌制15分钟。

3.接着用郫县豆瓣一勺、老抽一勺、生抽一勺、豆腐乳汁一勺、食用油一勺拌匀排骨腌制一个小时。

4.把花椒粒挑出来后,加入葱姜蒜末,再一点一点加入米粉(如果有称的话每样米各60g就不用一点一点加入了)混合均匀。5.竹屉下码放厚土豆片或者南瓜都行,再上层码上腌制好的排骨,大火蒸15分钟后改成中火再蒸一个小时,锅底的水一定要放够哦
