(2)、有求于客人时,用Could you ~ ?

以上这类情况如果用Would you ~ ? 来问,就变成上级对下级说话的口气,带有质问对方的意思,不适合酒店服务人员使用,所以应特别留意。

2.打招呼

向宾客问候时,必须始终面带微笑用眼睛看着对方。不要说Hello或Hi应该按照时间来说:

之后可根据情况加入适当的问句,例如:

如果知道客人姓氏,尽量使用客人姓氏。

3.回答

在与客人对话的过程中,有时必须就对方要求的事项作简要而具体的说明,有时须随声附和表示认同,或确认客人所说的话,已表示慎重。仔细听,听清楚,在依状况作正确的回答尤为重要。

(1)一般的回答:

I see, sir.我了解,先生。

(2)要客人等待时:

Just a moment, please.请稍等。

(3)拒绝客人要求时:

(4)道歉的时候:

餐饮礼仪问题可谓源远流长。据文献记载可知,至迟在周代,饮食礼仪已形成一套相当完善的制度,特别是经曾任鲁国祭酒的孔子的称赞推崇而成为历朝历代表现大国之貌、礼仪之邦、文明之所的重要方面。作为汉族传统的古代宴饮礼仪,自有一套程序:主人折柬相邀,临时迎客于门外。宾客到时,互致问候,引入客厅小坐,敬以茶点。客齐后导客入席,以左为上,视为首席,相对首座为二座,首座之下为三座,二座之下为四座。客人坐定,由主人敬酒让菜,客人以礼相谢。席间斟酒上菜也有一定的讲究:应先敬长者和主宾,最后才是主人。宴饮结束,引导客人入客厅小坐,上茶,直到辞别。这种传统宴饮礼仪在我国大部分地区保留完整,如山东、香港及台湾,许多影视作品中多有体现。下面就细节具体展开

安排客人入座是很有学问的,男主人应引着最尊贵的女士走进餐厅,并让她坐在他的右侧。特别尊贵的客人,也可以是最年长的女士,或久未造访的朋友。次重要的女客人应该被安排在男主人的左侧。女主人通常坐在桌尾,重要的男客人应该坐在她的左侧。必须注意的是男女客人要均匀地安排,并且尽量让夫妇分 开坐。当人太多的时候,女主人很难说得清客人们的座位,这时候可以使用座位卡。如果没有座位卡,女主人应当上前去告诉客人他们的座位。女士们找到座位后会马上坐下来,但女主人应最后入座。男士应当为他右侧的女士拉椅子,然后等到女主人入座后再坐下来。最尊贵的男客人在进客厅的时候会挽着女主人,但入座时应当为他右边的女士拉椅子,而女主人则由她左边的男士来为之效劳。左撇子的客人,应安排在角落上,这样,当他和旁边的人一起举筷的时候,不会碰到对方的手臂。入座时,要从椅子左边进入,坐下以后要坐端正身子,不要低头,使餐桌与身体的距离保持在10~20公分。入座后不要动筷子,更不要弄出什么响声来,也不要起身走动,有什么事要向主人打个招呼。动筷子前,要向主人或掌勺者表示赞赏其手艺高超、安排周到、热情邀请等。

第二,进餐时,先请客人、长者动筷子,加菜时每次少一些,离自己远的菜就少吃一些,吃饭时不要出声音,喝汤时也不要发出声响,最好用汤匙一小口一小口地喝,不宜把碗端到嘴边喝,汤太热时凉了以后再喝,不要一边吹一边喝。有的人吃饭时喜欢用劲咀嚼食物,特别是使劲咀嚼脆食物,发出很清晰的声音来,这种做法是不合礼仪要求的,特别是和众人一起进餐时,就要尽量防止出现这种现象。有的人喝汤时,也用嘴使劲吹,弄出嗦喽嗦喽的声音来,这也是不合乎礼仪要求的。

第三,进餐时不要打嗝,也不要出现其他声音,如果出现打喷嚏、肠鸣等不由自主的声响时,就要说一声“真不好意思”、“对不起”、“请原谅”之类的话,以示歉意。第四,如果要给客人或长辈布菜,最好用公用筷子,也可以把离客人或长辈远的菜肴送到他们跟前。按我们中华民族的习惯,菜是一个一个往上端的,如果同桌有领导、老人、客人的话,每当上来一个新菜时,就请他们先动筷子,或者轮流请他们先动筷子,以表示对他们的尊敬和重视。

第五,吃到鱼头、鱼刺、骨头等物时,不要往外面吐,也不要往地上扔,要慢慢用手拿到自己的碟子里,或放在紧靠自己的餐桌边,或放在事先准备好的纸上。

第六,要适时地抽空和左右的人聊几句风趣的话,以调和气氛。不要光低着头吃饭,不管别人,也不要狼吞虎咽地大吃一顿,更不要贪杯。

第七,最好不要在餐桌上剔牙,如果要剔牙时,就要用餐巾挡住自己的嘴巴。

第八,要明确此次进餐的主要任务。现在商海如潮涌,很多生意都是在餐桌上谈成的,所以要明确以谈生意为主,还是以联络感情为主,或是以吃饭为主。如果是前者,在安排座位时就是要注意,把主要谈判人的座位相互靠近便于交谈或疏通情感;如果后者,只需要注意一下常识性的礼节就行了。把重点放在欣赏菜肴上。

第九,最后离席时,必须要向主人表示感谢,或者就在此时邀请主人以后到自己家作客,以示回谢。

除了以上几点外,在此我还想谈谈劝人饮酒的细节礼仪。

中国人的好客,在酒席上发挥得淋沥尽致。人与人的感情交流往往在敬酒时得到升华。中国人敬酒时,往往都想对方多喝点酒,以表示自己尽到了主人之谊,客人喝得越多,主人就越高兴,说明客人看得起自己,如果客人不喝酒,主人会觉和有失面子。有人总结到,劝人饮酒有如下几种方式:“文敬”、“武敬”“ 罚敬”。这些做法有其淳朴民风遗存的一面,也有一定的负作用。“文敬”,是传统酒德的一种体现,也即有礼有节地劝客人饮酒。

酒席开始,主人往往在讲上几句话后,便开始了第一次敬酒。这时,宾主都要起立,主人先将杯中的酒一饮而尽,并将空酒杯口朝下,说明自己已经喝完,以示对客人的尊重。客人一般也要喝完。在席间,主人往往还分别到各桌去敬酒。

“回敬”:这是客人向主人敬酒。

“互敬”:这是客人与客人之间的“敬酒”,为了使对方多饮酒,敬酒者会找出种种必须喝酒理由,若被敬酒者无法找出反驳的理由,就得喝酒。在这种双方寻找论据的同时,人与人的感情交流得到升华。

“代饮”:即不失风度,又不使宾主扫兴的躲避敬酒的方式。本人不会饮酒,或饮酒太多,但是主人或客人又非得敬上以表达敬意,这时,就可请人代酒。代饮酒的人一般与他有特殊的关系。在婚礼上,男方和女方的伴郎和伴娘往往是代饮的首选人物,故酒量必须大。

为了劝酒,酒席上有许多趣话,如“感情深,一口闷、感情厚,喝个够”,“感情浅,舔一舔。”

“罚酒”:这是中国人“敬酒”的一种独特方式。“罚酒”的理由也是五花八门。最为常见的可能是对酒席迟到者的“罚酒三杯”。有时也不免带点开玩笑的性质。

总之,和客人、长辈等众人一起进餐时,要使他们感到轻松、愉快、气氛和谐。我国古代就有所谓的站有站相,坐有坐相,吃有吃相,睡有睡相。这里说的进餐礼仪就是指吃相,要使吃相优雅,既符合礼仪的要求,也有利于我国饮食文化的继承和发展。

作为一名刚刚学习了社交礼仪课程的大学生来讲,这门课让我受益匪浅,它是一门无声的语言,是人际交往的桥梁和纽带,体现出一个人的涵养,教养,素质水平。它直接关系到我们社交的成败与今后的发展。
