要是哪天你的书架开口对你说话,也许它会数落你的不是。反正我的亲身经历即是如此。瞧瞧那些没有读过的书吧!——去年或前年的年度必读书目、年轻小说家风靡热销的处女作,还有那些昔日红极一时,如今日渐年迈的作家所著的惨淡告别之作;有些书依靠夺人眼球的书名忽悠了你的钱袋,另一些则标榜着将从此改变你的人生(书上的推荐短评信誓旦旦作出承诺,要不就虚张声势吓唬吓唬你)。这一本本书像是一个个受了委屈的朋友,愤愤不平地埋怨着我们:“你怎么都不来看看我?”,“你为何不曾前来拜访?”,或者干脆直截了当地问道:“你为什么总是忽略我?”

然而有时书架的斥责不像是对朋友的埋怨,倒更像是祖辈对晚辈的告诫训斥,语气更为沉重也更为严肃。那声音严厉坚定,声调抑扬顿挫,节奏把握有度;任凭你出于好意来缓和气氛,打趣儿为自己开脱辩解,教训声仍不绝于耳:“你什么时候才能认真严肃起来?”、“你什么时候才能长大啊?”这些训斥声是从书房里那些最厚重的大部头中传来的,它们可都在你的阅读计划之列呢。最严厉的斥责也许来自那本又宽又厚的《堂吉诃德》,你总是打算要在夏天开始读它,结果——还是等明年夏天再说吧;也许来自那本泛黄的《战争与和平》,这是大学指导老师送给你的礼物,人家当初可是对你信心满满,但如今看来,显然是高估了你的毅力;也许是伯顿1翻译的《一千零一夜》在抱怨,书中一个个故事如迷宫般错综复杂。要不然,就是《河畔乔叟》2在生气,当年大二的《英国文学起源概述》这门课你得了个“优秀”,便兴冲冲地买下了它。

对我而言,如今最严厉的斥责声来自吉本巨著《罗曼帝国衰亡史》,我手上的那套是由弗里欧书社3出版的优美精装八卷版。前几天我才意识到,买下这套书之后的整整六年时间里,我非但从未将它们从书架上取下品读,甚至连书脊上印着的几列字都没好好正眼瞧过(第五本上写着“第五卷 查士丁尼与罗马法”,离得更远的那本上写着——“第七卷 意大利的诺曼人与十字军东征”)尽管如此,偶尔我也能完成几项工程艰巨浩大的阅读任务。有一年夏天,我耗尽心力,终于成功啃完了两部古希腊史诗,蒲柏翻译的《伊利亚特》和德莱顿 1 “伯顿”即指理查德·弗朗西斯·伯顿(Richard Francis Burton,1821-1890),英国军官、探险家、语言学家、翻译家和阿拉伯学者,是十九世纪最著名的探险家之一。据称伯顿能说29种语言,他也因翻译英文版《一千零一夜》而举世闻名。2 《河畔乔叟》(Riverside Chaucer)为收录乔叟所有作品的巨册,英文原版共计一千三百多页,其中另附乔叟生平介绍、作品创作年代表、文章注释、词汇表以及专有名词查询表等。3 弗里欧书社(Folio Society),是英国一家历史悠久、名声显赫的小型出版社。自1947年成立以来,该出版社一直致力于出版经典著作和小众著作的精装版本。翻译的《埃涅阿斯纪》。过去几年里,我也漫行于浩繁卷帙之中,看完了整整四卷康拉德4短篇小说全集、全五卷《冰岛萨迦全集》

5、特罗洛普6的六部帕利瑟系列政治小说,还有普鲁斯特的七卷鸿篇巨著7。虽说每部作品都各具特色,但在看完它们之后,都带给了我同一种复杂的矛盾心情,既为结束喜也为结束悲:一方面我为自己能够历经艰辛万苦最终完成这一任务而感到自豪,久日幽居于书房,我也有点浑身不自在呢;另一方面,我不得不承认,即便你耗费了巨大的精力去阅读不朽的文学巨著,最终都将见证自己的心力在时间的流逝中渐渐化为一个微不足道的句点,终结这场艰苦漫长的阅读旅途。这让我在高兴雀跃之余,又平添了几分哀伤。

我最近在进行的“厚重阅读”任务,单就页数来看,数量可观,史无前例:那便是狄更斯的小说全集,大概共有九千多页。我就快看完了,只剩下《老古玩店》和《埃德温·德鲁德之谜》两部作品还未翻动。我发现自己最喜欢的狄更斯作品恰恰也都广受众人喜爱,真不知是该为之喜还是该为之忧。但不管怎样,这位作家深受众人追捧,尽享世人厚爱,理应由其最受欢迎之作来公正地彰显他的伟大之处,这亦合乎情理,不足为怪。

狄更斯的所有小说中,我认为有三本在其各自的体裁之列堪称极致完美之作。纵览英国文学作品,在讲述善良幽灵唤起世人人性救赎的故事之中,《圣诞颂歌》无疑是顶尖之作(这正如同为上乘佳作的《螺丝在拧紧》8里,亨利·詹姆斯将邪恶鬼魂展现得淋漓尽致,作为《圣诞颂歌》的姊妹篇,这位“妹妹”则是阴险黑暗的化身)。而《双城记》是我所读过的最惊心动魄的惊险小说,读罢顿觉酣畅淋漓。如果我们都公认惊险刺激的故事只是好莱坞大片的特权,那我们可就亏大了。《双城记》的艺术特色是无可比拟的,那自然灵巧的情节过渡,对人物形象快速准确的刻画,对暴民癫狂**情状的精彩描摹,还有在简洁的语言中依旧流淌着的股股真情,绵绵情意。而作为一部惊险小说,它又怎能少得了追逐场面这一重头戏呢?且看马奈特医生一家一路快马狂奔,“三三两两的房舍、孤零零的农庄、倾塌的建筑物,染坊,硝皮作坊”9从身边飞驰而过,他们急速逃离血腥狂乱的巴黎,驶往安宁有序的英格兰。纵使惊险大片中疯狂追逐的汽车发出阵 4 约瑟夫·康拉德(Joseph Conrad,1857-1924),波兰裔英国作家。当过水手、船长,作品大多描写其航海生活经历,代表作有《水仙号上的黑家伙》、《黑暗之心》等。5 《冰岛萨迦全集》(Complete Sagas of Icelanders)是第一部冰岛萨迦文集英译作品,包含49个相关的故事,由来自世界7个国家的30位北欧中世纪文学与文化研究学者共同译成。萨迦,古代挪威或冰岛讲述冒险经历和英雄业绩的长篇故事。6 安东尼·特罗洛普(Anthony Trollope,1815-1882),英国作家,代表作品《巴彻斯特养老院》和《巴彻斯特大教堂》等。

此处作者所读的“七卷长篇巨著”应指马塞尔·普鲁斯特的《追忆逝水年华》(七卷)。

《螺丝在拧紧》中女人公受雇于一位富有的监护人,作其所监护的两个孩子的家庭教师。为了拯救孩子的灵魂,女教师与前任女教师的鬼魂及仆人的鬼魂展开了斗争。而孩子们虽在外表上天真无邪,却受鬼魂影响,异常狡黠。原文出自《双城记》第三部第十三章“五十二个”,译文参照了北京燕山出版社出版的《双城记》,宋兆霖译,见第290页。阵刺耳刹车声,呼啸而过的战斗机轰鸣声隆隆,试问又有哪部的惊险程度能胜过《双城记》中惊心动魄的追捕场面呢?

终于,该轮到《大卫·科波菲尔》登场了。它也是狄更斯本人的最爱10,较之其余作品,读罢让我更觉成就感十足。这部作品中一系列人物形象愈加丰满,这无疑是其他小说无法企及的。就算除了乐天派米考伯先生之外,《大卫·科波菲尔》中就再无其他令人难忘的角色,它仍能拥有永恒的文学价值。更何况,我们还是遇到了一个个极富个性的人物,让人印象深刻:油腔滑调、阳奉阴违的乌利亚·希普;性情古怪,变化无常,却又坚定可靠、值得信赖的贝西姨婆;那个注定以悲剧收场的朵拉,她美如娇花,年少稚嫩,不谙世事,在她早逝之前,终于深切体悟到自己的幼稚无知;还有大卫的继父爱德华·摩德斯通,一天到晚念叨着公平公正但却凶恶残暴,让人不堪忍受…如此个性鲜明的人物真是数之不尽。此书众多的推崇者察觉到,随着大卫由孩童迈入成人世界,狄更斯的艺术表现力逐步减弱。直至翻完最后一页,我自己却丝毫未曾发现书页中自始至终闪现的熠熠才华之光有半点黯淡之势,不过大卫早年的悲惨经历确实被描绘得生动逼真,令人难以忘怀。这个小男孩在人生的每一处转角,都能遇上独具个性的人物。狄更斯痴迷于人性的丰富性,在“人类”这同一物种之名下创造了一大批形形色色千姿百态的角色,组成了一支与众不同的剧团。在这一方面,他可与莎士比亚比肩而立。对独特人性探索的热情为众多狄更斯小说注入了坚不可摧的艺术力量,而当这股热情迸入小大卫的双眼之后,又彰显出了奇特的力量。这个小男孩既是一位对世界细致入微的观察者,也是一位对人间百态的热情阐释者。他非得成为这样的人不可。对他而言,洞悉不同的人性内在心理不单单是为了满足好奇心,这更是他迫不得已的生存所需。日后,正是这份对人性的敏锐洞察力将大卫从那些试图彻底击溃他的力量中拯救了出来。作为狄更斯的化身,大卫也具有成为文学大师的潜质——不过,孩童时代,他饱受困苦,当然无法充分表现这一点。他十岁就辍了学,被拽进伦敦的一家装瓶厂当小苦力,那时年幼的他只感觉自己快被生活的苦难压得喘不过气来了。

这是民国六年的冬天,大北风刮得正猛,我因为生计关系,不得不一早在路上走。一路几乎遇不见人,好容易才雇定了一辆人力车,叫他拉到S门去。不一会,北风小了,路上浮尘早已刮净,剩下一条洁白的大道来,车夫也跑得更快。刚近S门,忽而车把上带着一个人,慢慢地倒了。

跌倒的是一个女人,花白头发,衣服都很破烂。伊从马路上突然向车前横截过来;车夫已经让开道,但伊的破棉背心没有上扣,微风吹着,向外展开,所以终于兜着车把。幸而车夫早有点停步,否则伊定要栽一个大筋斗,跌到头破血出了。

伊伏在地上;车夫便也立住脚。我料定这老女人并没有伤,又没有别人看见,便很怪他多事,要自己惹出是非,也误了我的路。

我便对他说,“没有什么的。走你的罢!”

车夫毫不理会,——或者并没有听到,——却放下车子,扶那老女人慢慢起来,搀着臂膊立定,问伊说: “你怎么啦?” “我摔坏了。”

我想,我眼见你慢慢倒地,怎么会摔坏呢,装腔作势罢了,这真可憎恶。车夫多事,也正是自讨苦吃,现在你自己想法去。车夫听了这老女人的话,却毫不踌躇,仍然搀着伊的臂膊,便一步一步的向前走。我有些诧异,忙看前面,是一所巡警分驻所,大风之后,外面也不见人。这车夫扶着那老女人,便正是向那大门走去。

Six years have slipped by since I came from the country to the capital.During that time the number of so-called affairs of state I have witnessed or heard about is far from small, but none of them made much impression.If asked to define their influence on me, I can only say they made my bad temper worse.Frankly speaking, they taught me to take a poorer view of people every day.One small incident, however, which struck me as significant and jolted me out of my irritability, remains fixed even now in my memory.It was the winter of 1917, a strong north wind was blustering, but the exigencies of earning my living forced me to be up and out early.I met scarcely a soul on the road, but eventually managed to hire a rickshaw to take me to S-Gate.Presently the wind dropped a little, having blown away the drifts of dust on the road to leave a clean broad highway, and the rickshaw man quickened his pace.We were just approaching S-Gate when we knocked into someone who slowly toppled over.It was a grey-haired woman in ragged clothes.She had stepped out abruptly from the roadside in front of us, and although the rickshaw man had swerved, her tattered padded waistcoat, unbuttoned and billowing in the wind, had caught on the shaft.Luckily the rickshaw man had slowed down, otherwise she would certainly have had a bad fall and it might have been a serious accident.She huddled there on the ground, and the rickshaw man stopped.As I did not believe the old woman was hurt and as no one else had seen us, I thought this halt of his uncalled for, liable to land him trouble and hold me up.“It’s all right,” I said.“Go on.”

He paid no attentionbut set down the shafts, took the old woman's arm and gently helped her up.“Are you all right?” he asked.“I hurt myself falling.”

I thought: I saw how slowly you fell, how could you be hurt?

我从乡下跑到京城里,一转眼已经六年了。其间耳闻目睹的所谓国家大事,算起来也很不少;但在我心里,都不留什么痕迹,倘要我寻出这些事的影响来说,便只是增长了我的坏脾气,——老实说,便是教我一天比一天的看不起人。

但有一件小事,却于我有意义,将我从坏脾气里拖开,使我至今忘记不得。

这是民国六年的冬天,大北风刮得正猛,我因为生计关系,不得不一早在路上走。一路几乎遇不见人,好容易才雇定了一辆人力车,叫他拉到S门去。不一会,北风小了,路上浮尘早已刮净,剩下一条洁白的大道来,车夫也跑得更快。刚近S门,忽而车把上带着一个人,慢慢地倒了。

跌倒的是一个女人,花白头发,衣服都很破烂。伊从马路上突然向车前横截过来;车夫已经让开道,但伊的破棉背心没有上扣,微风吹着,向外展开,所以终于兜着车把。幸而车夫早有点停步,否则伊定要栽一个大筋斗,跌到头破血出了。

伊伏在地上;车夫便也立住脚。我料定这老女人并没有伤,又没有别人看见,便很怪他多事,要自己惹出是非,也误了我的路。

我便对他说,“没有什么的。走你的罢!”

车夫毫不理会,——或者并没有听到,——却放下车子,扶那老女人慢慢起来,搀着臂膊立定,问伊说:

“你怎么啦?” “我摔坏了。”

我想,我眼见你慢慢倒地,怎么会摔坏呢,装腔作势罢了,这真可憎恶。车夫多事,也正是自讨苦吃,现在你自己想法去。

车夫听了这老女人的话,却毫不踌躇,仍然搀着伊的臂膊,便一步一步的向前走。我有些诧异,忙看前面,是一所巡警分驻所,大风之后,外面也不见人。这车夫扶着那老女人,便正是向那大门走去。

我这时突然感到一种异样的感觉,觉得他满身灰尘的后影,刹时高大了,而且愈走愈大,须仰视才见。而且他对于我,渐渐的又几乎变成一种威压,甚而至于要榨出皮袍下面藏着的“小”来。

Totally regardless of my words,(or simply not having heard it,)he let go of the rickshaw, and helped the woman stand on her feet.Holding her arm, he asked: “Are you OK?”

“Not well.”

I watched her slowly falling down, how could she possibly get hurt? “She is pretending!” I thought to myself, “How contemptible it is!” The rickshaw man was being so “helpful” that he was troubling the trouble.I would leave him alone.Upon hearing the woman’s words, the rickshaw man made no hesitation.He was still holding her arm and they walked ahead step by step.Feeling a bit confused, I looked ahead.There was a patrolling police station, where nobody was outside in such a violent wind.The two were moving towards that place, surely.At that moment, a strange sensation seized me: his dusty figure suddenly became mighty.The further they walked, the mightier it seemed.In the end I had to look up to him.What he meant to me gradually became a pressure, a kind of pressure massive enough to overshadow “the little myself” beneath the garments.Street Haunting: A London Adventure(Excerpt)

第二届中国高校烹饪技术大赛比赛内容(白案)

参赛选手在135分钟内按十人份量现场制作,完成三个品种:第一个为油条(必选),第二个为小笼包、大饼、煎饺(三选一),第三个为地方风味品种。

(一)必选品种:油条

原料提供:面粉、调料若干,由赛场提供 基本要求:一两(50g)一个,共十个。现场醒发,制品无碱味、条身挺直、色泽金黄、25cm长呈丝瓜瓤状,口感外酥脆、味咸香。成品用不锈钢长方盘盛装。

(二)自选品种:小笼包、大饼、煎饺(三选一)

原料提供:由赛场提供。

1、小笼包:水面(发酵面团)、干面、肉馅、白菜馅、调料若干。

2、大饼:面粉、调料若干。

3、煎饺:面粉、肉馅、白菜馅、调料若干。基本要求:

1、小笼包:一两(50g)三个,一屉九个,共三屉,共二十七个。现场使碱,调馅制作。制品碱头适合、色洁白、提18—21个摺、馅心松软鲜嫩、口味鲜咸芳香、皮薄厚均匀,体积大小一样。成品用小笼屉盛装。

2、大饼:一斤半(750g),一张直径40—45cm,一张四块。现场和面成型,用电饼铛烙制。要求两面火候均匀,层次清楚,无碎层,无破边,6

层以上,咸味适度,口感宣软、焦香。成品用不锈钢方盘盛装。

3、煎饺:三两(150g)五个,共二十个。底脆,皮薄色正有嚼劲,味咸鲜略有汤汁,成型美观,花纹均匀。成品用不锈钢方盘盛装。

(三)地方风味品种 原料提供:选手自备

基本要求:依照本地区风味特色,选取符合食堂大伙要求的拍案品种,制作十人份量,要反映出一定的烹饪技术。要求经济实惠,有浓厚的地方特色,具有批量生产的可行性,能在高校大伙食堂推广。

此项比赛过程中,赛场会统一为选手提供操作台、冰箱、烤箱、电饼铛、醒柜、蒸柜、炉灶(煤气)、炸锅(直径60cm)、火钳、托盘、盛具、压条、滚筒等工具。特殊原料和特殊加热设备由参赛选手自带。

成本核算:以上白案品种的售价,原料占60%,水电气占10%,毛利占30%。要求白案地方风味小吃每个售价在6元以下。

比赛说明:指定品种比赛中,选手除自备烹饪器具外,不得携带任何其他物品进场,组委会提供统一的盛装器皿。

基本要求:咸甜酸辣并重,火候适中,色泽红亮,芡汁适中。菜品烹制完成后盛装于不锈钢盆中,达到十人份量(2500g),反映出其刀工、烹饪火候等技术要求。成品用(33cm)不锈钢盆盛装。

2、自选品种:软溜肉片、红烧豆腐、清炒土豆丝(三选一)

原料提供:由赛场提供。

(1)软溜肉片:猪肉、莴苣、调料若干。(2)红烧豆腐:豆腐、调料若干。(3)清炒土豆丝:土豆、调料若干。基本要求:

(1)软溜肉片: 口味鲜咸,口感香嫩,色泽金黄,汁明芡亮,火候适度,明油适量。

(2)红烧豆腐:味厚,味透,咸鲜略回甜;质地滑嫩色泽红亮,芡汁适中,成形美观,大小一致不破碎。

(3)清炒土豆丝:咸鲜味适中,可口,色泽自然,芡汁适中,刀工成形美观、粗细均匀。

自选品种不能使用任何速冻和成型的原料,必须由参赛选手现场进行切配加工。菜品烹制完成后用不锈钢盆(33cm)盛装,符合十人份量(2500g)。

3、地方风味品种

原料提供:选手自备,不能使用任何速冻和成型的原料,必须由参赛选手现场进行切配加工。

基本要求:依照本地区风味特色,选取符合食堂大伙要求的菜品,所用原料为畜类、禽类、一般水产类或其他烹饪原料,可荤可素,但一定要反映出刀工等烹饪技术。要求菜肴原料的搭配与烹调方法的组合具有新意和地方特色,具有批量生产的可行性,能在高校大伙食堂推广。

此项比赛过程中,赛场会统一为选手提供操作台、砧板、炉灶(柴油灶)、炒锅(直径60cm)、锅铲、炒勺、漏勺、条盘和供尝味用的样碟等设备和用具;特殊原料和特殊加热设备由参赛选手自带。

成本核算:以上红案品种的售价,原料占60%,水电气占10%,毛利占30%。要求红案地方风味品种每份(不少于250g)售价在6元以下。
