什么是国宴?

国宴是xx或国务院总理为外国元首、政府首脑来访而举行的正式宴会。国宾来访的另一个重要礼仪活动就是摆国宴。

国宴的隆重就在于一个“国”字,以国家名义招待外国贵宾,处处体现国家形象,因而是最高规格的宴请形式,如宴会厅内正面悬挂国旗,演奏国歌,国宴请柬、菜单、座位卡、席间乐的曲目单,甚至所使用的餐具上均饰有国徽图案等。

国宴的隆重,也可从出席者的服饰上看出来。出席国宴的人员均着正式服装。西方时兴穿大礼服,男士身穿黑色燕尾服,扎领结;女士则穿露背长裙,1986年英国女王访华欢迎宴会,英方男女客

人就是那样。而我方人员出席国宴时,男士一般穿深色西服或中山装,而女士多穿中式上衣配长裙或旗袍。

国宴规模、席位

过去,欢迎国宾的宴会在人民大会堂二层的大宴会厅举行。自上世纪80年代后期起,改在人民大会堂一层的西大厅举行(中外双方在东大厅进行正式会谈之后,即在西大厅出席宴会,非常方便)。现在西大厅的国宴一般是十来桌。

主桌上除我方领导人、国宾外,一般安排双方正部长级以上的人员以及双方的大使就座,其余各桌按身份高低,依次排列。各桌的主人面朝同一方向,每桌的主要客人座位在主人右手边,翻译则在主要客人的右手边。

国宴的程序

国宴一般是晚7时开始,时间不超过1小时15分钟。宾主双方的陪同人员先入席等待,待宴会开始时,国宾和配偶在我方领导人陪同下步入宴会厅,这时军乐队奏欢迎曲。宴会进行中间,席间乐一曲接一曲,都是中国和来访国著名的乐曲。宴会结束后,国宾在我方领导人陪同下,走向乐队,向乐队致谢。最后,国宾在我方领导人陪同下步出宴会厅,至北大厅中央握手告别。

原来,国宴上主人和客人讲话,一般是安排在热菜之后或宴会开始时。主人讲话后,演奏客方国歌;客人讲话后,奏主方国歌。1990年7月1日起,我国国宴上取消了讲话做法,于是奏国歌的时间便放在宴会开始时,即当我方领导人陪同国宾到达宴会厅主桌座位时,先在座位前站立,待奏完双方国歌后再落座。先奏客方国歌,后奏主方国歌。演奏两国国歌时,全体肃立,停止走动和交谈(摄影记者除外)。而自XX年起,国宴上不再演奏国歌,因为国宴往往是在欢迎仪式后举行,欢迎仪式上已经奏过国歌,时间不长再奏国歌,显得有些重复,故而减少了一次。

国宴的礼仪与服务

国宴上,男服务员身穿黑色西服,扎领结;女服务员身穿美观、高雅的旗袍。他们上菜斟酒动作娴熟,服务周到、热情。

入座后,服务员随即为每位客人摆好荤素搭配的冷盘,吃过冷盘后上汤(这是西餐习惯,与中餐不同),然后是上荤菜、素菜。第一道菜往往是该宴会的代表菜,最为名贵。热菜一般是三荤一素(现在一般是2-3道菜),依次端上,即待宾客吃完一道菜后,换上新餐盘,再由服务员及时端上另一道菜。主菜后是甜点、水果。

国宴用酒,过去主要以茅台为主,自1988年10月,国宴停止使用茅台酒等一切烈性酒。青岛崂山的矿泉水、青岛啤酒、五星啤酒,由于出口量比较大等原因,如今在国宴上很少能见得到了。新一代的北京啤酒、天津干白葡萄酒、可口可乐、燕京啤酒、橙宝、王朝葡萄酒、椰子汁、碧云洞矿泉水、浙江龙井茶等,已成为国宴的主要饮品。

我国国宴常常采用中菜西吃的方法,即客人可以用刀叉吃中餐。餐桌上为每位客人同时摆好了中餐筷子和西餐刀叉,任由客人选用。餐具是特制的,有中国瓷器、陶器、金器、银器、不锈钢器、铜器等。瓷器、陶器有制作精美的象形餐具,如白菜形瓷盘、鱼叶形瓷盘、牛(鱼)形瓷盘、龟形瓷盘、柿形瓷缸、橘形瓷盅、鸡形陶罐、鸭形陶缸、海螺、苹果形碗等。酒具为玻璃、水晶等制品。

国宴是什么样儿?生猛的山珍海味?鱼翅鲍鱼?还是传说中的“满汉全席”?其实,国宴也没那么雍容华贵,甚至可以说有点“朴实”。其实,国宴的重点并不在吃上„„

国宴“看人下菜碟儿”

国宴,顾名思义,是国家元首或政府为招待国宾、其他贵宾或在重要节日为招待各界人士而举行的正式宴会。不过上菜前,先得弄清什么不能上。文化、宗教、民族信仰不同,各自对饮食的禁忌也不一样。有道是“外交无小事”,调剂不好,就会在国际影响中留下“灰色档案”。

比如鱼翅,在中国,大家都认为这是道“贵菜”,餐桌上来一盘“倍有面儿”。但如果在欧洲贵族看来,吃鱼翅“既不健康,又太不环保”。此外,外宾的胃口一般都比较大,吃完后餐盘都比较干净。这就提醒我们在准备国宴时,一定留足“余量”。1976年,太平洋南部一个国家的代表团前来访华。当晚的菜肴以“汤”为主,对这些外宾来说,就“吃不够”了。原来,他们平时习惯于以淀粉含量大的面包果、芋头等薯类为主食。晚上,该国元首副官不得已来到接待室,问能否再弄点芋头、啤酒,他们“饿了”„„

知道了这些注意事项后,再准备起国宴就万无一失了。就拿现在来说,一般都是按“三步走”的程序来筹备菜肴:首先,向主人了解宾客的情况;其次,征询主人的意见;在正式下单、起菜前,征询客人的意见,等待他的确认。对有忌口的客人,有针对性地予以调配菜单,葱、姜、蒜这类刺激性调料,有选择性地予以添加。当然,对于那些身体有特殊症状的客人,如高血压、高血糖、中风患者,在配餐上也力求营养有效。

此外,在国宴的准备上,还有一个不成文的做法:给贵宾创造“故地重游”的感觉。一国元首再次访华时,往往会惊喜地发现,上次他喜欢吃的菜肴又一次出现在菜谱中;他上次用过的餐具、上次赴宴时的布置,会再次“重放”。他在家乡爱吃的食品,如汉堡之类,也会“原味”复制,这无疑增加了外宾们的印象分。

菜谱特别在哪里?

从以上的描述可以看出,国宴的菜式其实也并不特别:水晶虾冻、白斩鸡、如意鱼卷、牛排„„貌似咱小老百姓也都“撮”得起。那么就奇怪了,既然是一个国家最高规格的宴席,它总得有点特别的吧?里边究竟有什么讲究?

拿来招待“大人物”的菜品,首先要绝对保证安全。所有的原料都来自固定的渠道,采用严格的标准,如蔬菜都是有机蔬菜,不能添加任何化学肥料,避免有害物质给客人造成损害。对原料的所用部位也有严格规定,比如“开水白菜”这道菜最早源自四川,在当地,任何部位都可以入菜,白菜帮、白菜叶、白菜心„„但用于国宴时,只选取三寸半高、叶绿肉厚的,还要去掉菜帮留其三叶嫩心。看一下公式你就一目了然了:一份“开水白菜”的原料=5棵白菜。

此外,同样的品种,同样是“鸡鸭鱼肉”,国宴的选材可是“王者无敌”,由各地精选而来:燕窝,非泰国的官燕不用;鱼翅,不是南海产的一级群翅不上桌;金丝小枣,也只用乐陵产的;对虾来自山东,龙虾专挑福建的,鲍鱼是大连的好,绵羊是张家口的鲜香„„独家指定,对口定做,图的就是“国宴用品,美味无双”。

别以为选对产地就万事OK了。用行家的话来说,这“只等于成功了一半”,“出品”时机也非常关键。如鲥鱼必须是端午节前后捕捞的,萝卜须是霜降以后的„„原料“千呼万唤始出来”,成品自然卓尔不群响当当。

原料的问题解决了,接下来就是烹制了。特别值得一提的就是火候,那可真是“一明一灭见真章”,大火爆炒、文火慢炖、蜡火轻灼„„看似细微的火苗差异,却决定着迥异的味道。这就需要厨师反复地试验、总结。

如今,火上功夫更现代化了。如布什和里根总统都钟爱的“佛跳墙”,以前至少得在火上熬上三天三夜。现在有了电气化的烹饪器皿,新式的流程管理办法,烹饪效率得到了很大提高。但国宴厨师精工细作的态度依然没变:“一个星期是起码的,包括泡发干货、准备基础的调料等。菜在灶上至少也得呆个一天一夜。这是品质的保证。这可一点儿也不敢怠慢,毕竟国宴的金字招牌可不能倒。”

菜名“土气”方便翻译

看到这儿,也许你又纳闷了:国宴的内在可谓“尽善尽美”,可菜名怎么那么“土”?还不如饭馆里的菜名“炫”。这里边也是有说道的。因为国宴主要针对外宾,太过花哨的菜名,有时候会造成翻译的难度,也会令客人摸不着头脑,不如干脆直白点儿好,只有少数“引进”的地方菜保留原名,如孔雀开屏、佛跳墙、富贵蟹钳等等。

国宴的过程大致经历了三个历史时期。第一个时期是1970年代在中央办公厅管理处服务科工作,为第一代服务的时期,那个时期应该说我们料理的餐饮还称不上是国宴,只是为来访的阵营的国家而设的宴请。

此后一直到1980年代中后期是第二个时期,在计划经济体制下,我们为邦交国家的元首或者使团提供餐饮服务。服务科在这个阶段被移交。在这个时期的中后期,外事活动明显增多,豪华团队增多,接待组织工作积极方便许多。第三个阶段是1990年代到21世纪,在比较发达的市场经济下有大量的国家元首来访,国宴也走入了更加丰富、开放和多元化的历史时期。在第一个阶段我受到的严格、正规的教育,以及当时组织化军事化的管理,培养了我一丝不苟、精益求精的工作态度,这是令我一生受益的财富。当时对于服务科人员的遴选,要求政治可靠、表现积极。“知道的不说,不知道的不问。”当时的工作量不大,但学到的东西很多,为以后的开发和创新打下了基础。曾经到北京饭店、四川饭店等地方学习深造,很多传统菜式的制作,高精尖菜式的制作,包括全套西餐的制作都进行了深入的学习。

到了1990年代,我们为第三代服务,在这个时期也有很多国宴在举行。从规格上说,国宾馆主要是经典的小范围宴会,可负责来访嘉宾夫妇或者全家的一日三餐,这就需要全面了解他们的生活习惯和饮食要求。而大型宴会方面,应该说是一个榜样。国宴菜是国家或为招待外宾,以及政府的名义外国援华人员,以及为国家做出突出贡献人士的菜肴。国宴菜通常以淮扬菜为基础,汇集了各地方菜系,整理、改良而成。以咸味为主要口味,川菜减少了刺激性调料如辣椒、花椒的使用,淮扬菜减少了糖的食用,特点是清淡可口,软烂嫩滑,能够满足国内外大多来宾的要求。中国国宴一般在或国宾馆举办,但共设宴5000人,故近年国宴菜也进行了改革,以减少开支,菜单不超过三菜一汤,不上白酒。其中狮子头、佛跳墙及三宝鸭等为国宴菜的代表菜。

宴会程序 :

当宾客进入宴会厅时,乐队奏欢迎曲。服务员应站在主人座位右侧,面带微笑,引请入席。宾客入场就绪,宴会正式开始。全场起立,乐队奏两国国歌。这时已经在现场的服务员,都要原地肃立,停止一切工作。在主、宾起座时,主宾桌的服务员要随时照顾,现场的其它服务员要有秩序的回避两侧,保持场内安静。

主宾桌负责让酒的服务员,要提前斟好一杯酒,放在小型酒盘内,站立在讲台一侧,致辞完毕立即端上,以应宾、主举杯祝酒之用,并跟随照顾斟酒。

国宴一般是晚上举行,时间为一个半小时左右,入座前已摆好冷盘,每个人有四五种冷菜,一般是素菜、荤菜,有鸭掌、酱牛肉、素火腿等。为了保证菜点的质量(火候、色泽、温度等),使宾客吃得可口满意,服务员要恰到好处地掌握上菜的时机和速度。这就需要服务人员要熟悉本次宴会各种菜点的风味、火候和烹调所需的时间,做到心中有数,适时上菜,期间要及时与厨房互通情况。上热菜前,先上汤,然后是上荤菜、素菜,第一道菜,往往是最为名贵的,热菜一般是三荤一素,菜都是用小车从厨房推出来。

国宴不是四个菜同时上,而是等宾客吃完一道菜后,就有专门看桌子的服务员及时换下道菜。主菜上完,再上甜点、水果,水果是根据季节,有猕猴桃、葡萄、西瓜等,一般不固定某一种。每次用完餐,服务员都对桌布、筷子,进行清洗、消毒,盘子,碗等炊具也一样,以前,主要靠蒸、烫等进行消毒。如今,用洗碗机,去污、消毒,全部自动化。

严格地说来,这道菜应该叫“清汤白菜”,以“开水”命名,一是因看起来清汤如水,更多的是噱头。

1、说是白菜,其实只取大白菜中间的那点发黄的嫩心,将熟未透时的白菜心是最好的。

2、所谓“开水”,是将鸡、鸭、云南宣威火腿上的蹄子、排骨、干贝等鲜货分别入沸水锅中,除清血水和杂质捞出再洗净,一起放入汤锅内,加入足量清水、姜、葱,烧开后打去浮沫,加料酒,改用小火保持微开不沸,慢慢地熬至汤出鲜味(至少4个小时)。

3、将净鸡脯肉打成茸,用凉的鲜汤把肉茸搅成豆浆状,倒入烧开的鲜汤中,这时鲜汤会出现奇妙的景观:汤中的杂质争先恐后地吸附在肉茸上,慢慢地形成一个球状物,10分钟左右将球状物捞起,弃而不用。如此反复2-3次,直到把汤“清”得如开水般透澈。

4、微黄的“开水”做成,把白菜心放入沸水中断生,再用清水漂冷,去尽菜腥后放入漏勺中,用“开水”自上淋下,直至白菜烫熟,烫过白菜的“开水”则另作他用,不能用回开水白菜之中。将烫好菜心垫在汤盆底,轻轻倒入“开水”,即成。
