首先我来讲一讲西餐的餐序,就是你点菜吃菜的顺序。说实话没有人在场的话你愿意吃什么吃什么,但是比较正规的宴请这个西餐是有餐序的讲究的。大体上分为正餐和便餐两种类别,那么我首先来跟各位说说正餐的讲究。正餐一般来讲,有这么几道菜,第一道菜我们一般把它叫做头盘或者叫头盆,严格讲这是开胃菜,比如以色拉类为主,有的时候还有什么鹅肝酱,冻子,泥子这样一些东西,但是我们中国人熟悉的头盘主要是色拉,这个色拉有很多种,比如有蔬菜色拉,这比较清口的,有海鲜色拉,是比较名贵的,还有什锦色拉,混拌在一起的。除此之外这个头盘还有泥子、冻子之类的东西。所谓泥子我打个比方,很多同志吃肯德基吃过那土豆泥吧,还有一些同志到西餐馆吃过水果泥,把菠萝、苹果、梨给它磨成粘稠状的东西,这个其实在西餐中它也是开胃菜,一般选一种就行了,还有就是冻子,打个比方皮冻以前吃过吧,孩子的果冻你见过吧,西餐有的时候它也把菜给它熬熟了之后做成凝固状,冻子,它也是开胃菜,这是头盆。头盆一大特点比较清淡,比较爽口,帮助你打开胃口做好正餐的准备,所以严格讲它不是菜,就是开始曲,前奏。
正餐西餐第二道,主角就要开始了,如果我们说前面是前奏的话,那下面就是序幕就开始了就是汤。西餐跟广东菜有点相似,是先喝汤的,西餐这个汤也叫做开胃汤,不过这儿说个实话,我个人不明白西餐那汤为什么叫开胃汤,我往往一喝就饱了,可是他们把它叫做开胃汤的。比如有三种类型,红汤、清汤,白汤,红汤我们北京人比较熟了,因为北京人过去比较喜欢吃老莫,莫斯科餐厅吃俄罗斯菜,俄罗斯菜里面那个罗宋汤,就是俄罗斯红菜汤。这是红汤,琼汁,圆白菜,红萝卜,西红柿它在一块儿做的,那种汤它比较酸甜,很多人喜欢喝。还有就是白汤,蘑菇汤,奶油汤,这在法国菜里比较常见的,还有就是清汤,它比较清淡的,汤。
第三,这个西餐吃完了头盆吃完了汤之后,你注意,它都是菜,下面一个就是副菜,叫副菜。它菜分为主菜跟副菜的区别,这个副菜是什么副菜一般是海鲜类的东西,一般叫白肉,你注意我这儿用的词,白肉。白肉是什么,就是鱼肉和鸡肉,因为鱼肉和鸡肉做熟了之后你注意了吗?它是白色的,另外这个副菜吃完了就会是主菜,主菜一般特点是红肉,就是牛肉、羊肉、猪肉,它做熟了之后它是红色的,相对来讲红肉味比较浓,比较厚重,吃了之后耐饥耐饿,而白肉它比较单薄,属于一个过渡的情况。一般来讲,也可以不吃副菜,就是直接上来就吃主菜了。
接下来以后要吃什么呢?就是吃甜品。冰淇淋,水果,干果,坚果,鲜果以及什么各种各样的布丁,炸薯条,三明治,曲奇饼,烤饼这样一些甜品,接下来最后结束曲是什么呢?喝饮料,它一般喝什么饮料呢?我们后面会专门有一讲来谈,它一般要喝咖啡或者喝白兰地酒或者喝红茶,干嘛?化解油腻的,你想想这一大堆东西吃出来,多饱多撑啊,他要喝点什么咖啡、红茶、白兰地这种烈酒之类来化解油腻。这是我讲的是个正餐的顺序。另外还有便餐,便餐就比较简单,便餐一般是工作餐或者自己去点,便餐一般是什么呢?头盆,是要的,色拉类要要一个,汤要,一道主菜,一个甜品,有的时候甜品也可以不要,就是少了,这关于餐序我说一说。1.辨认餐桌刀叉

1.天气、气候。这是英国人的习惯,在火车上碰到同车等人,必定由天气展开话题。
