茶与咖啡在近代英国的竞争
①茶与咖啡,分别被视为中西文化的象征,但在西方国家中,英国也以爱好饮茶而著称。英国人的饮茶习惯是逐渐形成的,而咖啡在英国一度也颇为流行。
②咖啡最初是在埃塞俄比亚被一牧童发现,后来经阿拉伯地区、土耳其传到欧洲。1652年,伦敦第一家咖啡馆开张。咖啡作为新兴饮料受到欢迎,伦敦咖啡馆的数量也迅速增长。由于咖啡馆收费低廉,各界人士都乐于前往,在那里休闲解乏、阅读报刊、交流信息乃至针砭时弊,咖啡馆成为颇具影响的公共场所。
③17世纪上半叶,茶得以进入西方并进入英国,但其社会影响较为有限。到了17世纪末,饮茶主要局限于社会上层。1657年,英国商人托马斯·加威首次将茶引入咖啡馆,并张贴海报宣传茶的养生功能。
④咖啡在英国社会的流行,有两个有利因素:首先,运输条件的优势。当时咖啡的主要产地在也门,与英国距离较近,这与从中国运输茶叶相比更为便捷;其次,由于运输距离近,咖啡的价格较茶而言更为低廉。
⑤但是,咖啡在英国很快便遭遇传播阻碍。随着咖啡馆数量的增长,竞争不断加剧,经营者开始增添新的饮料,茶正是在这一背景下跻身咖啡馆之中,咖啡馆实际变为提供咖啡、酒类、茶水等饮料的交流场所,咖啡的生存空间受到挤压。更为不利的是,社会人士开始抨击咖啡馆与咖啡。在英国,咖啡馆是一个男性化的场所,常常兼营陪宿等生意,女性群体被排斥在外。有社会人士假借妇女的口气对咖啡予以批判。他们痛陈咖啡在英国所导致的不良变化,认为咖啡颜色像磨碎的煤炭,咖啡馆破坏了英国人善结人缘的美德,以前英国男士充满男子气魄,如今却失去了昔日的威仪,罪魁祸首即饮用咖啡。英国社会出现的针对咖啡的抵制风潮,其出发点主要基于社会道德乃至经济利益。
⑥由于咖啡馆并非仅为饮用咖啡的场所,一边饮用咖啡一边阅读报刊成为普遍现象。于是咖啡馆就理所当然地成为人们关心社会问题、公开针砭时弊的场所。出于维护统治的需要,复辟的斯图亚特王朝借助社会中对咖啡的抵制,先后两次下令关闭咖啡馆。
⑦进入18世纪后,茶在英国中产阶级家庭逐渐普及。凯瑟琳王后、玛丽二世与安妮女王均喜好饮茶,她们持续的示范效应促进了饮茶在女性中的传播,女士们在家中品茗强化了饮茶的家庭化趋向。咖啡加工工序繁复,非个人所能及,饮茶则极为方便,所以在公共领域与私人空间均可以传播开来,尤其在私人空间占据优势。随着饮茶在英国的普及,下午茶孕育而生,它既是温馨家庭氛围的体现,亦可以成为社会交往的场域,极大地丰富了饮茶的社会功能,对咖啡构成挑战。
⑧更具决定意义的是,世界贸易格局促进了茶在英国的传播。最初,中西茶贸易为荷兰所掌控,英国人购茶不仅价格昂贵,而且供应量极小。后来,英国在东亚积极开拓,英国东印度公司的贸易条件有所改善,英国茶叶输入量逐年递增,茶叶逐渐取代丝绸成为英国东印度公司的业务重心,也是英国财政的重要来源,英国社会鼓励消费茶叶。
⑨英国人由饮用咖啡转为饮茶,这一变化看似平淡无奇,实则折射了复杂的历史进程。这既与两种饮品的特性、传播领域的差异、咖啡馆的变迁有关,更是两种饮品贸易格局发生变化的结果。

“二老,大六月日头毒人,你又上川东去,不怕辛苦?”
“要饭吃,头上是火也得上路!”
“要吃饭!二老家还少饭吃!”
“有饭吃,爹爹说年青人也不应该在家中白吃不作事!”
“你爹爹好吗?”
“吃得做得,有什么不好。”
“你哥哥坏了,我看你爹爹为这件事情也好象萎悴多了!”二老听到这句话,不作声了,眼睛望着老船夫屋后那个白塔。他似乎想起了过去那个晚上那件旧事,心中十分惆怅。老船夫怯怯的望了年青人一眼,一个微笑在脸上漾开。
“二老,我家翠翠说,五月里有天晚上,做了个梦„„”说时他又望望二老,见二老并不惊讶,也不厌烦,于是又接着说,“她梦得古怪,说在梦中被一个人的歌声浮起来,上悬岩摘了一把虎耳草!”
二老把头偏过一旁去作了一个苦笑,心中想到“老头子倒会做作”。这点意思在那个苦笑上,仿佛同样泄露出来,仍然被老船夫看到了,老船夫就说:“二老,你不信吗?”
那年青人说:“我怎么不相信?因为我做傻子在那边岩上唱过一晚的歌!”
老船夫被一句料想不到的老实话窘住了,口中结结巴巴的说:“这是真的„„这是假的„„”
“怎么不是真的?天保大老的死,难道不是真的!”

老船夫的做作处,原意只是想把事情弄明白一点,但一起始自己叙述这段事情时,方法上就有了错处,因此反被二老误会了。他这时正想把那夜的情形好好说出来,船已到了岸边。二老一跃上了岸,就想走去。老船夫在船上显得更加忙乱的样子说:
“二老,二老,你等等,我有话同你说,你先前不是说到那个——你做傻子的事情吗?你并不傻,别人才当真叫你那歌弄成傻相!”
那年青人虽站定了,口中却轻轻的说:“得了够了,不要说了。”
老船夫说:“二老,我听人说你不要碾子要渡船,这是杨马兵说的,不是真的吧?”
那年青人说:“要渡船又怎样?”
老船夫看看二老的神气,心中忽然高兴起来了,就情不自禁的高声叫着翠翠,要她下溪边来。可是,不知翠翠是故意不从屋里出来,还是到别处去了,许久还不见到翠翠的影子,也不闻这个女孩子的声音。二老等了一会,看看老船夫那副神气,一句话不说,便微笑着,大踏步同一个挑担粉条白糖货物的脚夫走去了。
过了碧溪岨小山,两人应沿着一条曲曲折折的竹林走去,那个脚夫这时节开了口:
“傩送二老,看那弄渡船的神气,很欢喜你!”
二老不作声,那人就又说道:
“二老,他问你要碾坊还是要渡船,你当真预备做他的孙女婿,接替他那只渡船吗?”
二老笑了,那人又说:
“二老,若这件事派给我,我要那座碾坊。一座碾坊的出息,每天可收七升米,三斗糠。”
二老说:“我回来时向我爹爹去说,为你向中寨人做媒,让你得到那座碾坊吧。
至于我呢,我想弄渡船是很好的。只是老家伙为人弯弯曲曲,不利索,大老是他弄死的。”
老船夫见二老那么走去了,翠翠还不出来,心中很不快乐。走回家去看看,原来翠翠并不在家。过一会,翠翠提了个篮子从小山后回来了,方知道大清早翠翠已出门掘竹鞭笋去了。
“翠翠,我喊了你好久,你不听到!”

方山子,是光州、黄州一带的隐士。年轻时,仰慕汉代游侠朱家、郭解的品行,乡里的游侠之士都推崇他。(等到他)年岁稍长,就改变志趣,发奋读书,想以此来驰名当代,但是一直没有交上好运。到了晚年隐居在光州、黄州一带名叫岐亭的地方。住茅草屋,吃素食,不与社会各界来往。放弃坐车骑马,毁坏书生衣帽,徒步在山里来往,没有人认识他。人们见他戴的帽子上面方方的且又很高,就说:“这不就是古代乐师戴的方山冠遗留下来的样子吗?”因此就称他为“方山子”。
我因贬官居住在黄州,有一次经过岐亭时,正巧碰见了他。我说:“哎,这是我的老朋友陈慥陈季常呀,怎么会在这里呢?”方山子也很惊讶,问我到这里来的原因。我把原因告诉了他,他低头不回答,继而仰天大笑,请我住到他家去。他的家里四壁萧条,然而他的妻子儿女奴仆都显出怡然自得的样子。

甲:有些人根本不了解文字和思想情感的密切关系,以为更改一两个字不过是要文字顺畅些或是漂亮些。其实更动了文字,就同时更动了思想情感,内容和形式是相随而变的。姑举一个人人皆知的实例。韩愈在月夜里听见贾岛吟诗,有“鸟宿池边树,僧推月下门”两句,劝他把“推”字改为“敲”。这段文字因缘古今传为美谈,于今人要把咬文嚼字的意思说得好听一点,都说“推敲”。古今人也都赞赏“敲”字比“推”字下得好。其实这不仅是文字上的分别,同时也是意境上的分别。“推”固然显得鲁莽一点,但是它表示孤僧步月归寺,门原来是他自己掩的,于今他“推”。他须自掩自推,足见寺里只有他孤零零一个和尚。在这冷寂的场合,他有兴致出来步月,兴尽而返,独来独往,自在无碍,他也自有一幅胸襟气度。“敲”就显得他拘礼些,也就显得寺里有人来应门。他仿佛是乘月夜访友,自己不甘寂寞,那寺里假如不是热闹场合,至少也有一些温暖的人情。比较起来,“敲”的空气没有“推”的那么冷寂。就上句“鸟宿池边树”看来,“推”似乎比“敲”要调和些。“推”可以无声,“敲”就不免剥啄有声,惊起了宿鸟,打破了岑寂,也似乎平添了搅扰。所以我很怀疑韩愈的修改是否真如古人称赏的那么妥当,究竟哪一种意境是贾岛当时在心中玩索而要表现的,只有他自己知道。如果他想到“推”字而下“敲”字,或是想到“敲”而下“推”字,我认为那是不可能的事。所以问题不在“推”字和“敲”字哪一个比较恰当,而在哪一种境界是他当时所要说的而且与全诗调和的。在文字上推敲,骨子里头实在是在思想情感上的“推敲”。
乙:贾岛《题李凝幽居》:“闲居少邻并,草径入荒园。鸟宿池边树,僧敲月下门。”这几句诗并不好,只是他对作诗非常认真,一个字都不放过,要反复研究,这种精神还是可取的。对于用“敲”字还是用“推”字,韩愈认为“敲”字好。王夫之在《薑斋诗话》里说:“若即景会心,则或推或敲,必居其一;因景因情,自然灵妙,何劳拟议哉!”诗人不是为写景而写景,景物有会于心,可以用来表达情意才写,所谓“即景会心”。究竟是“敲”字还是“推”字合于情意呢?假如诗人已经有了要表达的情意,那么两字中哪个字合于情意,当下就可决定,用不着反复推求。问题是诗人对所要表达的情意不明确,所以决不定。就这首诗来看,敲的该是李凝幽居的门,这个僧可能是作者自指,因作者出家为僧,法名无本。那他在晚上去找李凝,应该敲门,才和幽居相应。从音节上说,敲字也较为响亮。
