黑茶茶艺

各位评委老师,大家好,我叫高琪,今天我为大家表演的是茯茶茶艺。茯砖茶以优质黑毛茶为原料经过压制、发花等工序精心制作而成。特殊的工艺造就了茯砖茶独有的品质,让我们静下心来感受这承载中华茶文化厚重历史、并体验茶叶神奇功效的伏茶魅力吧。

第一道:摆盏迎客

今天所选用的是紫砂壶(用来泡茶)、公道杯(用来均匀茶汤)、品茗杯(品饮茶汤),这样有利于冲泡茯砖茶特有的菌花香来。

(备注:所有茶具离开茶船都要沾一下茶巾,右手拿茶具注意手势,左手兰花指,从右至左划一圈展示给客人看)

第二道:初探金花

即赏茶。今天为大家准备的是产于益阳茶厂的优质茯砖茶,金光闪闪又似米兰摇曳,闻之具有独特的菌花香或中草药香。

(备注:左手拿茶荷大口方向,放下时两手一起放下)

第三道:水火交融

即煮水。今天我们选用的是不含任何杂质的纯净水。品饮黑茶用水温须达到100摄氏度,茶的内含成分才能得以充分浸出。

第四道:温壶烫盏

即洗器。将茶具用沸水再进行冲洗一次,使壶身温热,也可使茶叶的色香味本质随着温度而适宜的表现出来。(备注:紫砂壶壶盖置于茶壶左上方,沸水注入紫砂壶、公道杯中,公道杯里面的水从右至左倒入品茗杯中,再将公道杯竖起来倒掉剩余的水,保持肩膀平直)

第五道:黑龙入坛(茯砖入宫)

即投茶。将茯砖茶投入紫砂壶内,即称之为茯砖入宫。

(备注:左手拿茶导交给右手,左手再拿茶荷,拨三次茶叶,左手放下茶荷,右手把茶导交给左手,左手再把茶导放入茶道组里面,左边的物品左手拿)

第六道:金花沐浴

即洗茶。伏茶经过紧压茶身有一定的紧密度,需要通过洗茶温润才能使茶叶充分舒展,茶汁才能浸出。此过程恰似美丽的金花洗去一路风尘,渐渐现出本来的姿容。

(备注:茶水沿着壶内侧逆时针方向倒一圈,把水倒出来时顺时针方向)

第七道:悬壶问鼎

即茶之冲泡。热水从壶中直泻而下,充分激荡茶底,茶叶像一条条蛟龙在壶中上下翻滚。

第八道:藏龙卧虎

即闷茶。我们需等待一至两分钟,所以我们可以利用这段时间洗小茶杯。冲泡时间太短,色香味不能显示,但陈年茯砖因内含成分已被氧化和分解,茶汁极易浸出,故泡茶时间不能太长。

(备注:从右至左倒掉品茗杯中的水)

第九道:琥珀流光

即斟茶。一壶好的黑茶泡好了,茶汤如琥珀流光,美不胜收。

即奉茶。将沏好的茶汤均匀分到品茗杯中,甘甜的黑茶预示着今日生活的美好,借此道程序寓意中华民族大家庭永远和睦相处,幸福与共。

(备注:品茗杯放在托盘中呈三角形摆放,切记不能摆成一条直线,奉茶从右至左,将最右边的茶给最右边的客人,依次,切记不能先中间后两边,奉茶礼仪举案齐眉,左手拖茶盘底部,将品茗杯放入托盘中时,托盘不能放在茶船上,应左手拖住茶盘底部)

第十一道:玉液琼浆

即品茶。历经沧桑的伏茶在洗尽凡尘后,真是再现其华丽而不失端庄的大家风范(备注:喝一口,记住请的姿势)。汤如琥珀,晶莹剔透,宁静厚重,醇化圆润,香气纯正而深沉(备注:喝一口,请的姿势,第二圈要划一圈),处处彰显历史的沉淀之感,回味隽永(备注:喝一口,请的姿势)。

第十二道:古道回味

即收杯谢客。茯砖茶承载历史,承载健康。宛如古道中走来的黑美人,内敛而深邃,沉静而悠远,“饮罢方舟去,茶烟袅细香。”愿悠悠茶香带给你一份宁静,一份祥和,一份安康。

绿茶茶艺

各位评委老师,大家好,我叫高琪,今天我为大家表演的是绿茶茶艺,请大家静下心来与我共享茶艺的温馨与愉悦。

第一道:焚香除妄念

俗话说:“泡茶可以修身养性,品茶如品味人生,”古今品茶都有讲究平心静如气。“焚香除妄念”即通过点燃这支香来营造一个祥和肃穆的气愤,并达到驱除妄念、心平气和的目的。

第二道:冰心去凡尘

茶是至清至洁,天涵地育的灵物,泡茶要求所用的器皿也必须至清至洁,我们现在把干净的玻璃杯再烫洗一遍。

(备注:水杯倒入1/3的水,逆时针转三圈,右手握住杯口1/3处,左手兰花指,倒水时右手握杯,左手转杯三圈,从外往内转,边转边倒水,双肩打开不要加紧)

第三道:玉壶养太和

我们将要冲泡的绿茶属于芽茶类,因芽茶极细嫩,若直接用开水冲泡,会影响茶汤的色、香、味,并破坏茶叶的维生素,所以泡龙井茶、碧螺春等高级绿茶只能用80-85度的开水,为了使泡茶的水温不温不火恰到好处,在我们泡茶之前要把壶盖打开,将水凉至80-85度,这称之为“玉壶养太和”。

(备注:给一个手势给随手泡,打开壶盖凉水)

第四道:清宫迎佳人

苏东坡有诗云:“戏作小诗君勿笑,从来佳茗似佳人。”清宫迎佳人即用茶导把茶叶投入玻璃杯中。(备注:左手拿茶导,右手辅助顺时针转一圈)

第五道:甘露润莲心

好的绿茶如莲心,在开泡之前先用开水温一下,这就称为“甘露润莲心。”

(备注:关上壶盖,倒入1/3杯水)

第六道:凤凰三点头

绿茶在冲泡之前也讲究高冲水,在泡茶时茶壶三起三落,好似凤凰向各位在点头致敬。

(备注:冲水时冲在水杯内壁,前后方向拉三次,双肩打开,不要夹着肩膀)

第七道:碧玉沉清江

绿茶的茶芽在开泡后逐渐沉入杯底,这称之为“碧玉沉江底”。

(备注:右手兰花指从左至右展示一下)

第八道:观音捧玉瓶

佛教故事中传说观音菩萨常捧着一个白玉净瓶,净瓶中的甘露可以消灾祛病,救苦救难。观音捧玉瓶即由我将泡好的茶献给客人。

第九道:春波战旗枪

杯中温暖的水如春波荡漾,在温水的浸泡下茶叶慢慢舒展开,尖尖的叶芽如枪(备注:双手端杯至右边停一下),展开的嫩叶如旗(备注:左边停一下),在品茗之前先观察欣赏,在青碧澄净的茶水中,千姿百态的茶芽随波晃动(备注:顺时针摇晃水杯),好像有生命的绿精灵在舞蹈,十分赏心悦目。

第十道:慧心悟茶香

品绿茶与品乌龙茶龙井茶一样要一看、二闻、三品味,所不同的是绿茶的想起更加清幽、淡雅,要用心灵与感悟(备注:给一个请的姿势,闻一次,转一圈),才能闻得出绿茶哪种春天的气息,以及清纯淡雅,难以言传的生命之香(备注:请,闻一次)

第十一道:淡中品致味

绿茶的茶汤清纯甘甜,淡而有味(备注:请,喝一口),绿茶虽然不像红茶那样浓艳醇厚,也不像乌龙茶那样 岩韵醉人(备注:转一圈,请,喝第二口),但茶圣陆羽认为“茶性俭”,只要是有心人,一定能从淡淡的绿茶茶汤中品出天地间至清至纯、至臻至美的韵味来(备注:请,喝第三口)。

茶具的摆放

品茗杯花纹方向朝向客人,杯子数量多可摆成圆形,三个可摆成三角形,四个可摆成直线或者圆弧形。随手泡壶嘴方向朝茶船方向,茶壶置于茶船右中位置,公道杯置于茶船左中位置,茶巾叠被子的方式折放于茶船中间下方位置,开口方向朝自己。

中国茶艺

项目意义:不论是茶道还是茶艺。最根本的两个基础是“茶”和“艺”,故称茶艺。物质与精神两个方面是茶艺的根本。茶就是科学泡茶,科学饮茶,使人们充分吸收茶叶的营养保健物质达到强身健体。艺就是把泡茶饮茶艺术化、人轻松愉快,达到精神上的养生。

适合人群:所有人群(最适宜成年以上)

简介:中国的民族性,自然谦和,不重形式。所以不管是唐代的茶经,宋代的大观论茶,或明代的茶疏,文中所谈仅是通论,一般人民将饮茶融成生活一部份,没有什么仪式,没有任何宗教色彩,茶是生活必需品,高兴怎么喝,就怎么喝。饮茶所讲究的是情趣,如「披咏疲倦」、「夜深共语」、「小桥画舫」、「小院焚香」,都是品茗的最佳环境和时机,「寒夜客来茶当酒」的境界,不但表露出宾主之间的和谐欢愉,而且蕴蓄着一种高雅的情致。

《四君子茶艺》

“四君子茶艺”由颍溪茶童吴冠军先生创作于1998年,此套茶艺程式结束了“茶艺”只能在台上演绎而难以真正走入百姓生活的历史,从而开启“家庭茶艺”之先河,其内容融艺术性与实用性为一体,少缺了演艺型茶艺中的矫柔造作而更注重于实用。整套茶艺流程简洁明快,寓意深刻,尤其适合三、五好友共享佳茗时使用,并适用于泡饮各种名茶,故深受茶艺爱好者推崇,在家庭茶事中被广为应用。

一、相聚是缘,恭候光临

将清洗好的茶具布设于台面,寓意主人全体家庭成员喜迎嘉宾。

二、活火煮泉,恭请上座

开启电茶炉煮沸泉水,并将品茗杯翻转置放于泡茶基座之上,寓意恭请客人入席就座,待品佳茗。

三、高山流水,涤尽凡尘

将泉水注入紫砂壶,然后依次倒入品茗杯,起温壶烫杯作用,寓意为远道而来的客人洗去一路风尘。

四、叶嘉共赏,游龙归宫

为客人展示即将品饮的茶叶,并介绍相关茶叶知识与此茶的出处,并取适量茶叶投入紫砂壶。

五、兴旺发达,步步升高

以悬壶高冲之手法注水入壶击打茶叶,使泡沫溢出壶口起醒茶作用,四溢的泡沫象征祝愿来宾在事业与生活上兴旺发达、步步高升!

六、远离尘嚣,分承香露

将烫好的品茗杯从泡茶基座移至茶托上以备斟茶之用,寓意让我们暂且远离都市的喧嚣,在这目映奇石幽兰、耳绕丝竹禅音的佳境里,来共同分享佳茗的幽香。

七、忆苦思甜,情深意浓

高浓度的茶汤入口浓烈,但回味甘甜绵长,会让主宾共同忆起往昔同甘共苦的患难岁月,并更加珍惜今天的美好时光。谈笑间,更进一步加深了友人之间的感情。八、九九归一,地久天长

主人以“关公巡城”手法分九次为三位客人斟满品茗杯,然后以“悬壶高冲”手法一次注满自己的杯子,寓意此次品茗活动即将结束。九九归一,有相聚之际必有离别之时,但我们的友谊定会地久天长。

九、尽杯谢茶,一路顺风

主宾同时举杯,将佳茗一饮而尽,既寓意客人感谢主人以佳茗相待,亦寓意主人祝愿来宾归途一路顺风!

茶叶文化

广义茶文化:物质与精神财富的总和

《神农本草经》:神农尝百草,日遇七十二毒,得荼而解之。

王褒的《僮约》:武阳买茶,烹茶尽具。西汉时期,最早谈到茶具概念。

陆羽的《茶经》,是世界上第一部关于茶的书

其水,用山水上,江水中,井水下。其山水,拣乳泉、石池慢流者上。

饮茶方式

茶粥:即擂茶,把茶叶和其他各种材料放入擂钵中捣碎,冲水饮之。

唐代:煮茶,唐末出现斗茶。工序:炙茶、碾末、罗茶、煎茶、酌茶

宋代:斗茶盛行宋代茶叶分为团饼茶和散茶。贡茶主要产于福建建安,又名北苑,称为北苑贡茶。宋徽宗赵佶《大观茶论》

清代:撮泡法,分有六大基本茶类:绿茶、红茶、乌龙茶、白茶、黑茶,出现乌龙功夫茶品饮艺术 茶叶

茶树:性喜温暖、湿润。栽培:无性生殖能够保持茶树的性状和特性。

茶多酚:(氧化 发酵)茶红素、茶黄素

绿茶

不发酵茶,具有栗香、清香。扁炒青:扁平光滑,制法不同,品质特征也有差异。

乌龙茶(青茶)

半发酵茶,具有花香。

闽北、闽南、潮汕、台湾四个产区

台湾包种茶:兰花清香。茶叶呈深绿或青褐色,茶汤呈密绿或密黄

红茶

全发酵茶,具有花果香、甜香,滋味醇和茶汤呈朱红色

茶红(褐)素:使茶汤发暗,叶底暗褐。

黑茶

后发酵茶。普洱茶:汤色红浓明亮,叶底褐红,滋味醇厚回甘。

茶叶感官

红、绿、黄、白毛茶审评杯碗:高58mm,容量为200ml

乌龙茶杯呈倒钟形,高52mm,容量为100ml。碗的容量为110ml。

水的要求:无色透明,无沉淀物,无味无臭。

评茶

干评外形:嫩度、形状、色泽(色度、均匀度、光泽度)、整碎度、净度

湿看内质:汤色、香气、滋味、叶底(老嫩、厚薄、色泽、均匀度)

高档茶:色泽较浅而鲜亮,油润性好中低档:色泽变深,油润性变差陈茶滋味淡而不爽 干看春绿茶:色泽绿润,茶叶肥壮重实,或有较多白毫

干看春红茶:色泽乌润,茶叶肥壮重实,或有较多白毫

湿看春绿茶:茶叶冲泡后下沉快,叶底柔软厚实

湿看夏绿茶:茶叶冲泡后,叶底薄而较硬

湿看夏红茶:对夹叶较多

茶具

原始社会是一具多用。明朝开始出现专用茶具:茶壶、杯、盖碗。

顾景洲:现代著名紫砂壶大师,壶艺泰斗

唐:青瓷(浙江)白瓷(河北)

宋:黑釉(福建)宋代:官窑、哥窑、汝窑、定窑、钧窑

明:紫砂(宜兴)白瓷(景德镇)

金属茶具(锡):密闭性好,较好的防潮,避光性能好。

龙泉哥窑的青瓷:瓷胎薄质,釉层饱满,釉面显现纹片,纹片形状多样。

广彩:在瓷器上施金加彩,宛如千丝万缕的金丝彩线交织,显示金碧辉煌,雍容华贵的气度 宜兴紫砂壶:泥色多变,耐人寻味,壶经久用,反而光泽美观

特点:泡茶不走味,贮茶不变色,盛暑不易馊

景德镇白瓷:薄如纸,白如玉,明如镜。

盖碗(三才碗):蕴含天盖之,地载之,人育之。

品茗和用水

现在五大名泉:镇江中冷泉、无锡惠山泉、苏州观音泉、杭州虎跑泉、济南趵突泉

软水:钙、镁离子<8mg/l

硬水主要成分:碳酸钙和碳酸氢镁,一经高温煮沸变成软水。

含铁质不能用,茶多酚与铁离子结合,使茶汤颜色变深。

钙含量>2ⅹ10-6时,茶味变涩。通常泡茶用水总硬度不超过25°G浑浊度<5°PH值<5 雪水:汤色明亮,香味具佳井水:易受污染,使汤色变淡,汤味带咸

自来水:氯化处理过的,使茶汤香气变淡

茶艺规范和礼仪

人员:文化素质、茶叶知识、泡茶技巧、仪容仪表服饰:端庄、大方、整洁

行茶程序:准备阶段、操作阶段、完成阶段工作三轻:说话轻、操作轻、走路轻

茶艺馆:环境准备、用具准备、人员准备环境:幽、静、雅、洁

管理重点:货源管理、人才管理、内部管理茶艺三种形态:品茗、营业、表演

泡茶技法

泡茶三要素:茶水比例、水温、浸泡时间

煮水环节讲究不同茶叶品种所需水温不同

绿茶1:5080ºC时间不宜过久,容易闷黄泡熟

红茶1:6090ºC

乌龙茶1:2295ºC以上

普洱茶、紧压茶1:20100ºC

茶具选择

一杯好茶需要掌握:选茶、择水、备器、冲泡、品尝

茉莉花茶:盖碗乌龙茶:紫砂茶壶,重在啜。

沏泡方法

基本程序:备器、煮水、温壶(杯)、置茶、冲泡、奉茶、收具

温壶(杯):提高温度,清洗

瓷壶主泡器:瓷壶、品茗杯、盖置、杯托、茶船

盖碗主泡器:盖碗、茶船

福建功夫茶

程序:备具、洁具、赏茶、置茶、温润跑、正式冲泡、淋壶、洗杯、斟茶、奉茶(斟茶时,杯中茶汤七八成满为宜)

器具:紫砂小壶、品茗杯、茶船、烧水炉具、茶叶罐、茶荷、茶夹、茶则、茶匙、茶巾、水盂

乌龙茶

先观其汤,再闻其香,后品其味,三口见底

潮汕乌龙茶 主泡器:茶船、壶承、紫砂壶、盖置、壶垫、茶海、闻香杯、品茗杯、杯托

台湾乌龙:清香型。

程序:备具、温壶烫盏、赏茶、置茶、温润泡、正式冲泡、刮沫、淋壶、洗杯、滤茶、斟茶、奉茶、品茶温壶烫盏:将开水注入紫砂壶和公道杯

公道杯主要用来中和茶汤

闻香杯在左,品茗杯在右

唯独需要闻香杯:将其中茶汤旋转倒入品杯,嗅闻香杯的热香。

白茶:

主泡器:玻璃杯、杯托、茶叶罐、茶匙、赏茶杯、烧水炉具,一般为七八成满

黄茶:

玻璃杯、杯托、杯盖、赏茶盘、茶叶缸、茶匙、烧水炉具

君山银针:赏景为主的特种茶冲泡大约10分钟后可以饮用

黑茶:

茶盘、盖碗、公道壶、小品杯、茶叶罐、茶则、茶针、茶巾、烧水炉具

将水冲入盖碗,洗涤后,将茶水从斜置的盖碗和碗沿的间隙中倒出

花茶:三分钟后,向内翻转碗盖,闻其香,适宜更年期女性饮

科学饮茶

基本要求:

正确选择茶叶、冲泡方法和品饮

茶多酚:杀菌抗病毒、抗氧化、除臭、抑制动脉硬化、抗辐射、降血脂

咖啡碱:兴奋、强心、利尿、减肥

维生素E:抗氧化、延缓衰老

不同季节饮茶

春季:绿茶

夏季:绿茶中加白菊花、金银花等,清凉解暑,冰红茶

秋季:乌龙茶

冬季:红茶
