中国菜谱的日语翻译
可译性问题是翻译理论研究的一个重要的问题,它并非泛指两种语言是否能够相互翻译,而指的是某些感情、艺术色彩以及文化特色比较浓厚的的语言表现形式在具体的翻译过程中,由于语言差别而所能达到的译文准确性的程度的问题。虽然可译性是翻译存在的前提,但是并不代表翻译过程中就没有困难和障碍,绝对完全的、不流失任何信息的翻译是极其困难的,从这一点而言,语言本身便是可译性与不可译性的对立统一。
在汉语中,中国菜名是一种极具特色的语言形式,不仅承载着数千年来中国菜的风味特色、烹饪技艺,而且蕴含着如民俗、历史、文学、宗教信仰等中华民族文化。作为人类文化的重要组成部分,中国饮食文化与日本的饮食文化之间存在着相互交流的基础,同其它语言现象一样,中国菜名也具有一般语言材料的可译性特征。但是,由于中日语言在发音、语义与结构上存在着差异,加之菜名中不可避免地存在着许多日本没有的概念,致使在翻译中容易产生障碍,而且有些障碍甚至是很难逾越的,这就形成了翻译中的不可译现象。本文从中国菜名的构词特点和语音特点两方面进行可译性分析,希望能够寻找到一些规律和技巧,以增进我们对菜名这一特殊语言材料的翻译研究。
一、中国菜名的构词特点与可译性分析
中国菜名在构词方面有一个显著的特点,即“烹调法+原料”(如红烧鱼翅)、“作料+原料”(如糖醋里脊)等的构词方式十分常用。它们都是以原料为中心语,或体现烹调方式,或点明主要作料,以便顾客根据口味进行选择。由于此类菜名构词简洁明了,没有承载过于复杂的文化内涵,因此具有较强的可译性特征。从翻译技巧而言,对于“烹调法+原料”式菜名,一般采用直译法即可,例如:
红烧鱼翅:フカヒレの煮込み
清蒸桂鱼:桂魚の蒸し物 干炸带鱼:太刀魚の揚げ物
素炒白菜:白菜の炒め
烤乳猪:子豚の丸焼き
葱爆牛肉:牛肉と葱の強火炒め
而对于“作料+原料”式的菜名,一般在作料和原料的翻译词之外再加上烹调方式的相关表达,以利于日本人的理解。例如:
火腿白菜:白菜とハムの煮物
糖醋里脊:ぶつ切り豚肉の甘酢 腰果虾仁:カシューナッツと蝦の炒め 豆瓣鱼:魚の唐辛子味噌煮
鱼香茄子:なすの魚味風炒め
芹菜牛肉丝:セロリと牛肉の細切り炒め 在上述翻译菜名时,都需要在译文中译出烹调方式,因此对于种类繁多的烹调方式的日语 必须较好地掌握。例如常见的“炒(炒める)”、“炸(揚げる)”、“烤(焼く)”、“烧(煮込む)”、“蒸(むす)”、“爆(強火炒める)”等。另外,即使在同一种烹调方式中,也可能根据原料和作料的不同而出现不同的叫法,例如“红烧黄鱼(シログチの醤油煮)”、“白烧鲳鱼(マ

不过,并非所有菜名都采用上述具有较高可译性的构词方式,一些菜名蕴含了独特的联想意义和文化内涵,而这些汉语表达往往很难用日语进行解释。在要求译文简洁的前提下,这些菜名的可译程度受到极大的局限。此处以三类菜名为例进行说明。
第一,菜名中出现固有的习语、地名、人名、典故等文化元素。中国菜中有 带有地名的特色菜,另外,还有一些菜名与创始者或者传说典故有关。在翻译这些菜名时,虽然可以使用音译法或者直接翻译法,但是如果日本人并不熟知那些文化元素,需要以“直译+释义”的方式,在译文后补充其内在含义。例如:
广州炒饭:広州チャーハン(中国式ペーコンと焼き肉入りのチャーハン)东坡肉:トンボーロー(豚ばら肉の角煮)
叫花鸡:こじき鶏(鶏の粘土包みオーペン焼き)口水鸡:コウスイチ―(蒸し鶏の激辛ソース)
佛跳墙:ファッチューチャン(山珍海味の極上蒸しスープ)
第二,菜名中出现喻义、夸张等表述。由于有很多菜名利用汉语词汇同音异义以及某些材料同形异物的特点,尽量使用带有吉利、富贵、喜庆等色彩的词汇,从而造就很多菜名无法用日语直接翻译,只能按照普通菜名的方式译出原料与烹饪方法,其菜名的美学内涵几乎缺失了。例如:
发财好市:髪菜と干し牡蠣の蒸しもの 红烧狮子头:肉だんごの醤油煮込み 金钱冬菇:肉詰めシイタケの揚げ物 水晶肴肉:塩漬け肉の煮こごり 霸王别姬:スッポンと鶏のスープ
第三,菜名中出现缩略等表述形式。在中国菜中,有很多地方菜使用了缩略形式来概括较为复杂的烹调材料。由于这些菜名大多约定俗成,当地人一般可联想到其用料和作法,但是对于日本人而言,是无法对其联想意义产生完全相同的理解的。例如:
凉拌三丝:春雨と野菜の千切りサラダ(しゅんうとやさいのせんぎりさらだ)干烧四宝:たけのこ、しいたけ、えんどうと肉のチリソース煮 地三鲜:ピーマン、ナス、ジャガイモの炒め 八宝菜:八種類の具入りの中華風のうま煮
可见,对于此类可译性极弱的菜名,翻译时也只能用较为繁琐的意译形式,原文简洁明了的特点无法体现。
二、中国菜名的音韵特点与可译性分析 汉语和日语的语音系统有很大差别,从而造成由语音形成的文化形态上的差异,特别是语音审美观念上的差异。由于汉语音节分明、一字一音,逐渐形成独特的音韵美学文化,如双音化、四字格、双声、叠韵、叠音、平仄及韵律等。这些音韵美学特征也明显体现在中国菜名中,表现为音节整齐、声调平仄相间、叠音与双声叠韵词语的运用等。日语虽然也使用汉字,但是由于其音韵以“拍”为基础,且词调为高低调,因此汉语的音韵美较难在日语中体现出来。仅从这一点而言,在语音层面,中国菜名的可译性程度很差。
比如前文中的“发财好市”,是广东人年夜饭桌上的常见菜,实际上是利用了“财”与“菜”的同音,“好”与“蚝”(即“牡蛎”)同音,迎合了中国人喜欢讨个好彩头的文化心理。但是日语却只能译为“髪菜と干し牡蠣の蒸しもの”,不仅失去了原汉语菜名的音韵美,由同音而产生的吉祥意也完全不能体现出来。
另外,中国菜名还善于运用叠音以增强菜名的音乐美感,如棒棒鸡、担担面等。用叠音词来具体描绘菜品特点,上口顺畅,过目成诵,使菜名充满活力。而且,汉语里独有的双声、叠韵词也体现出中国菜名上,如鸳鸯火锅、咕噜肉等,铿锵婉转,别有韵味。但是,由于汉日语音系统的差别,叠音、双声等音韵特征是很难得体翻译的,通常的译法是忽略顺畅简洁的音韵美而直接译出菜的主要原料和烹调方式。不过,近年来,更常见的是利用片假名音译为外来语,然后在其后加上注释。例如:
咕噜肉:酢豚(すぶた)
艾窝窝:アイ―オーオー(餡入りもち米団子)
鸳鸯火锅:おしどりホーコー(二色スープの四川風しゃぶしゃぶ)棒棒鸡:バンバンジー(蒸し鶏の胡麻ソース掛け)葱油粑粑:葱油バーバー(葱入り揚げ餅)当然,有的汉语菜名为了追求音节与音律的美感,不惜牺牲其它方面的信息传达。主要表现在两个方面,一是为了语音不惜加入不必要的衬字,例如川菜的“水煮鱼”,后两个字“煮鱼”已经把菜名所要传递的信息都表达出来了,而这里使用“水”字更多的还是为了保持菜名三音节的语言韵味。这种为了保持一定韵律而加上去的音节,在翻译为日语式则完全不用考虑,直接将其意译为“魚の唐辛子煮込み”即可。另一方面体现在为了保持规整格式而减去必要的音节。例如,“红烧下巴”中的“下巴”特指鱼的下颚,为了保持四字形式,减去了很必要的“鱼”字,但是在日语的译名中,则必须加译为“魚のアゴの煮込み”。
三、在文化交流中的可译性程度的变化
从上述分析可知,中国菜在“形”方面有一定的可译性,但是一些蕴含独特的文化元素的菜名则可译性较弱,而在“音”层面也很难得体翻译。造成这一现象的根本原因还是在于各个民族在接受外来文化时具有一种共同的文化心理。这种文化心理就是,在接受异族外语概念时,总是希望用本民族语言的原有概念来表述或解释外来概念。但是很多时候一种民族语言的概念在另一种民族语言中无法找到对应的概念表达,甚至很难用这种语言对它作出很好的解释。
不过,笔者认为,随着中日两国文化交流的不断深入,特别是随着中国饮食文化对日本人的不断影响,中国菜名在语义甚至语音方面的可译性程度会出现逐步变强的变化过程。这方面已经出现了很多成功的案例。例如中国饺子据传在江户时代传入日本,当时日本人无法用日语的对应概念来解释其取名自“更岁交子”以示辞旧迎新的文化内涵,于是只能生吞活剥地接受了它的语音,将其叫做“チャオツ”,但都加上了“メリケン粉に包んだもの”或“焼いた豚饅頭”的注释。然而,现在看来,“ギョウザ”这个词早已融入日语词汇中,其概念也相应地融入了日本人的饮食文化中,其可译性在历史进程中由弱变强了。此类例子还有很多,例如“チャーハン(炒饭)”、“シュウマイ(烧麦)”、“マーボー豆腐(麻婆豆腐)”、“ワンタン(馄饨,其译名源自广东语“云吞”)”、“チャーシュー(叉烧肉)”等。这些译名更多地保留了中国饮食文化的原生状态,是成功传播中国饮食文化的典型范例。就笔者的亲身体会而言,现在很多日本人都可以很自如地说出“タンタン面(担担面)”、“ホイコーロー(回锅肉)”、“チンジャオロース(青椒肉丝)”等菜名,并十分熟悉其作法和味道,这说明越来越多的中国菜名开始以原生状态的形式出现在日语中,随着文化交流的深入,它们是很有可能融入日本人的饮食文化中的。
当然,由于中国菜品种繁多,加之汉语发音十分复杂,汉日两种语言在语义和逻辑上容易产生对应关系,从而造成在翻译中国菜名时一般较少考虑语音层面的传达,多从语义角度进行翻译。值得我们注意的是,由于地区、季节、餐厅的差异,一些同名的菜肴所用材料也可能会有不同,例如,“油爆双脆”既可能是“豚のガツと鶏の砂肝の強火炒め ”,也可能是“豚の胃袋と家鴨の砂肝の強火炒め”,因此在翻译前最好向餐厅人员进行确认,以免张冠李戴,出现误译情况。另外,翻译菜名和翻译其它日常用品有所不同,由于其具有浓厚的文化内涵,与中国人的生活息息相关,因此在口头翻译时,如果时间允许,应该抓住时机适当补充一些有关菜肴的具体作法、传说典故和营养价值等相关背景知识,另外再撒点“文化作料”,从而提起客人的食欲,活跃现场气氛,以达到翻译的最佳境界和效果。
