第三篇:菜肴小故事

松鼠桂鱼藏利剑

松鼠桂鱼是苏州松鹤楼菜馆的名菜,也是苏式菜肴中的珍品。

松鼠桂鱼,因其菜形酷似松鼠而得名。菜盘上桌,鱼首微昂,鱼尾高翘,浇上卤汁,立即发出“吱吱”的声音,犹如松鼠在欢鸣一般。

松鼠桂鱼是由古代的“鱼炙”演变而来。传到清朝,才名声大震。

说起来还是乾隆下江南时的事情。乾隆又一次来到苏州。他听人们都称赞松鹤楼的菜做得不错,心里一动,便带了两个内待和一班护卫,乔装打扮,直奔观前街,远远望见松鹤楼,乾隆便想当年曾在此为了一道“全家福”菜,而遭受奚落的事,心里不免有些酸溜溜的,于是,盘算着这次一定要抖抖威风,消消当年的那股恶气。他迈步走进店堂,一眼看见案桌上满身斑点的桂鱼活蹦乱跳,便回头向内待示意要这道菜。内待立即向跑堂的交待了一番:跑堂的忙找店老板嘀咕了一阵。店老板见进来的这位贵客举止非同一般,说话是北方口音,身旁有人服侍,周围又有便衣护着,便已料到绝非寻常人物。他忙向厨师发话::“有贵人来吃饭,一定要把看家的本领拿出来。这样一来,楼上楼下一阵忙乱。

不一会儿,一盘热气腾腾、色鲜油亮的松鼠桂鱼摆在了乾隆的同前。店老板亲自上菜把盏,站立一旁伺候。乾隆也不举筷子,用手一指问道:”此鱼何名?“ 店老板答道:”此乃桂鱼。“ 又问:”此菜何名?“ 答道:”此乃小店名菜松鼠桂鱼。因其形如松鼠,故而得名。请贵客品尝。“ 乾隆仔细一看,果然有些意思,便举筷尝了一口,说道:”嗯,味道不错!“ 店主人忙又陪笑说:”这道菜还有一段来由哩!“ 乾隆问:”什么来由?你慢慢讲来。“ 店老板上前一打躬,说道:”请贵客听小人道来。“ 传说春秋时期,吴王僚专横无道,举国臣民非常痛恨他。他的堂兄公子光便有意除掉吴王僚而自立为主。这时,伍子胥便将名士专诸推荐给公子光。公子光深知王僚爱食鱼炙,就派专诸到太湖向名厨专门求教制作鱼炙的技术。数月后,专诸学成回来,公子光便设计宴请王僚,命专诸想办法在宴会那天,将匕首藏在鱼炙腹中敬献,伺机刺杀王僚。专诸欣然领命。只是,在鱼腹中藏匕首,而又不能露出破绽,确实难处不小,为此,专诸着实动了一番脑筋。他先将鱼背上的肉剞出花纹,入油锅一炸,鱼肉便松涨竖立起来,再用佐料一炙,浇上辅料,鱼的外形就模糊不清了,端上桌来,很难看出其中暗藏的匕首。

”’鱼藏剑’果然灵,公子光剌杀王僚取得成功,自立为王,独霸一方,这就是吴王阖闾。于是,鱼炙也随之出了名。

此后,只要吴王阖闾高兴,便叫专诸做这道菜。

狗不理包子

传说在清朝的时候,天津附近武清县杨村住着一个少年人,名唤高贵有,他从小性格倔犟,出了名的牛脾气,如果逆了他的性子,九头牛也拉不回来,任何人也不理。这一天,高贵有的牛脾气又发作了,父亲吓他不睬,母亲劝他不理,就是拧着脖子,一声不吭,母亲叹了口气,说道:“你这种牛脾气呀,真是个‘狗不理’啊!”意思是说他脾气坏得连狗也不愿搭理。“狗不理”的绰号,就这样传开了。

转眼间,高贵有长到14岁,脾气依然十分暴躁倔犟。父亲害怕他在村子里惹是生非,就托人把他带到了天津,去学点手艺,去找点事做。恰好坐落在天津南运河边上的刘家蒸吃铺需要小伙计,高贵有就被介绍了进去。

刘家蒸吃铺主要经营蒸食和肉包,供应那些在运河上讨生活的船工、纤夫以及小商小贩,活计十分繁重,高贵有虽然脾气坏,但从小吃惯了苦,所以干活很勤快,店里的师傅们都很喜欢他。高贵有人又十分聪明,什么东西一学就像,一学就会,因而店里就专门让他学做包子,由于高贵有勤奋好学,加上师傅们的精心指点,高贵有做包子的手艺不断长进,很快就小有名气了。

三年满师后,高贵有已经精通了做包子的各种手艺,于是就独立出来,自己开办了一家专营包子的小吃铺。由于高贵有手艺好,做事又十分认真,从不掺假,所以做出来的包子特别好吃,名声很快就响了起来,来吃他包子的人越来越多。由于人们喊惯了他的绰号“狗不理”,顺带也就把他做的包子称为“狗不理”包子。没想到这个特别的名称竟使得他的生意更加红火了。

高贵有生意越做越好,就越来越感到“狗不理”的绰号难听,就给自己的店铺取了个雅致的牌号,唤作“德聚号”,这个牌号虽然好听,但人们还是“狗不理”不离口。

有一天,几位外埠客商专程来品尝“狗不理”包子,一进门就问:“老板,这儿是‘狗不理’吗?”高贵有一听,立刻恼火起来,犟着脖子,粗着嗓子说道:“咱这儿有招牌,是德聚号,你们长没长眼睛?‘狗不理’在那边,要去趁早。”客商们一看,果然不是“狗不理”,转身出门去找了一圈,又转回来了,对高贵有说道:“你就是‘狗不理’呀!怎么开这种玩笑呢!”高贵有一看,这个绰号是怎么也摔不掉了,现在连外埠人也知道了,没有办法,只好任人家去叫。

就这样,“狗不理”的名号越传越广,“狗不理”包子也越来越被人们喜欢,成了中国著名的传统风味点心。

饺子的来历和传说

饺子是一种历史悠久的民间吃食,深受老百姓的欢迎,民间有“好吃不过饺子”的俗语。每逢新春佳节,饺子更成为一种应时不可缺少的佳期肴。

据三国魏人张揖著的《广雅》记载那时已有形如月牙称为“馄饨”的食品,和现在的饺子形状基本类似。到南北朝时,馄饨“形如偃月,天下通食”。据推测,那时的饺子煮熟以后,不是捞出来单独吃,而是和汤一起盛在碗里混着吃,所以当时的人们把饺子叫“馄饨”。这种吃法在我国的一些地区仍然流行,如河南、陕西等地的人吃饺子,要在汤里放些香菜、葱花、虾皮、韭菜等小料。

大约到了唐代,饺子已经变得和现在的饺子一模一样,而且是捞出来放在盘子里单独吃。

宋代称饺子为“角儿”,它是后世“饺子”一词的词源。这种写法,在其后的元、明、清及民国间仍可见到。

元朝称饺子为“扁食”。明朝万历年间沈榜的《宛署杂记》记载:“元旦拜年„„作匾食”。刘若愚的《酌中志》载:“初一日正旦节„„吃水果点心,即匾食也。”元明朝“匾食”的“匾”,如今已通作“扁”。“扁食”一名,可能出自蒙古语。

清朝时,出现了诸如“饺儿”、“水点心”、“煮饽饽”等有关饺子的新的称谓。饺子名称的增多,说明其流传的地域在不断扩大。

民间春节吃饺子的习俗在明清时已有相当盛行。饺子一般要在年三十晚上12点以前包好,待到半夜子时吃,这时正是农历正月初一的伊始,吃饺子取“更岁交子”之意,“子”为“子时”,交与“饺”谐音,有“喜庆团圆”和“吉祥如意”的意思。

过年吃饺子有很多传说,一说是为了纪念盘古氏开天辟地,结束了混状态,二是取其与“浑囤”的谐音,意为“粮食满囤”。另外,民间还流传吃饺子的民俗语与女娲造人有关。女娲抟土造成人时,由于天寒地冻,黄土人的耳朵很容易冻掉,为了使耳朵能固定不掉,女娲在人的耳朵上扎一个小眼,用细线把耳朵拴住,线的另一端放在黄土人的嘴里咬着,这样才算把耳朵做好。老百姓为了纪念女娲的功绩,就包起饺子来,用面捏成人耳朵的形状,内包有馅(线),用嘴咬吃。

饺子成为春节不可缺少的节目食品,究其原因:一是饺子形如元宝。人们在春节吃饺子取“招财进宝”之音,二是饺子有馅,便于人们把各种吉祥的东西包到馅里,以寄托人们对新的一年的祈望。

在包饺子时,人们常常将金如意、糖、花生、枣和栗子等包进馅里。吃到如意、吃到糖的人,来年的日子更甜美,吃到花生的人将健康长寿,吃到枣和栗子的人将早生贵子。

有些地区的人家在吃饺子的同时,还要配些副食以示吉利。如吃豆腐,象征全家幸福;吃柿饼,象征事事如意;吃三鲜菜。象征三阳开泰。台湾人吃鱼团、肉团和发菜,象征团圆发财。

饺子因所包的馅和制作方法不同而种类繁多。即使同是一种水饺,亦有不同的吃法:内蒙古和黑龙江的达斡尔人要把饺子放在粉丝肉汤中煮。然后连汤带饺子一起吃;河南的一些地区将饺子和面条放在一起煮,名日”金线穿元宝"。

饺子这一节目佳肴在给人们带来年节欢乐的同时,已成为中国饮食文化的一个重要组成部分。

饺子源于我国有2600多年历史。据说,饺子源自“医圣”张仲景“冬至舍药”。东汉时期,南阳郡涅的张仲景,在长沙太守期间,见白河两岸乡亲肌寒交迫,骨瘦如柴,不少人耳朵僵冻溃烂,心不能忍,辞官为民行医。冬天刚到,他让弟子在南阳东关搭棚支锅,把羊肉、辣椒和驱寒药材一锅同煮,熟后捞出切碎,用面皮包成耳朵状的“娇耳”再煮制成“祛寒娇耳汤”,每人每只娇耳一碗汤服后周身血液上涌,两耳发热,寒气顿消。冻耳很快治好。1700多年来世代承传,人们每年冬至包食娇耳以纪念张仲景恩师。

中西方的饮食方式有很大不同,这种差异对民族性格也有影响。在中国,任何一个宴席,不管是什么目的,都只会有一种形式,就是大家团团围坐,共享一席。筵席要用圆桌,这就从形式上造成了一种团结、礼貌、共趣的气氛。美味佳肴放在一桌人的中心,它既是一桌人欣赏、品尝的对象,又是一桌人感情交流的媒介物。人们相互敬酒、相互让菜、劝菜,在美好的事物面前,体现了人们之间相互尊重、礼让的美德。虽然从卫生的角度看,这种饮食方式有明显的不足之处,但它符合我们民族“大团圆”的普遍心态,反映了中国古典哲学中“和”这个范畴对后代思想的影响,便于集体的情感交流,因而至今难以改革。

西式饮宴上,食品和酒尽管非常重要,但实际上那是作为陪衬。宴会的核心在于交谊,通过与邻座客人之间的交谈,达到交谊的目的。如果将宴会的交谊性与舞蹈相类比,那么可以说,中式宴席好比是集体舞,而西式宴会好比是男女的交谊舞。由此可见,中式宴会和西式宴会交谊的目的都很明显,只不过中式宴会更多地体现在全席的交谊,而西式宴会多体现于相邻宾客之间的交谊。与中国饮食方式的差异更为明显的是西方流行的自助餐。此法是:将所有食物一一陈列出来,大家各取所需,不必固定在位子上吃,走动自由,这种方式便于个人之间的情感交流,不必将所有的话摆在桌面上,也表现了西方人对个性、对自我的尊重。但各吃各的,互不相扰,缺少了一些中国人聊欢共乐的情调。

所以,归根结底还是感性与理性之间的差异。但是,这种差异似乎在随着科学的发展而变的模糊。越来越多的中国人以不再只注重菜的色、香、味,而更注重它的卫生与营养了。尤其是在经历了非典以后。还有,人们因为越来越繁忙的工作,觉得中餐做起来太麻烦,不如来个汉堡方便等。这样一来在饮食上差异也就不太分明了。

但俗话说“剑亦有弊也有利”,也就是说,在科学发达的今天,中西餐饮仍就存在着不可忽视的缺点和弊端。那么如何避免和剔除两者的缺点,如何改善两者的饮食结构,如何将两者进行有机结合,如何让中西方饮食为人类健康做出更大贡献。我们课题小组特经过细致的调查和认真的比较,这里将简要从下面两个方面谈谈中西方饮食文化的差异。

一、饮食观念的差异

对比注重“味”的中国饮食,西方的饮食是一种理性饮食观念。西方人喜好小而精。对于烹饪食物,营养性和美味性就是他们的出发点和目的地。他们全力开发和研究食物在不同状态下的营养差异,即便口味千篇一律,也一定要吃下去——因为有营养。而在中国的饮食文化中,对“味”的追求往往大于对“营养”的追求,饮食的美性追求显然压倒了理性——从餐桌上各式各样的菜色中就不难看出。这种价值理念的差别形成了中餐过分注重饭菜色、香、味的特点,而西方人则自始至终坚持着从营养角度出发,轻视饭菜的其他功能

从烹饪过程来看,中国人爱加醋、姜、蒜、葱辣椒等佐料,可以杀菌、消脂、增进食欲,帮助消化等作用。西方人虽佐料单调,可也不乏优点,他们烹饪时不爱放味精,因为味精含钠,摄入过量有损健康; 许多中国人习惯每日购买新鲜食品烹饪;西方人往往一次性购买一周的食品贮存在冰箱里,每日食用冷冻食品,且食用的罐头和腌制品分别为中国人的八倍和六倍,要知道它们含较多的防腐剂和色素等化学品,均对身体不利,这值得生活日趋简单化的都市白领一族注意的。中国人炒菜时多用大火,因而油烟多,加上多不注意厨房的通风设备;而西方人不爱用大火炝锅,且厨房通风条件相当注意。因而烹饪人员及家庭主妇中患肺癌率中国人明显高于西方人。

3实验步骤和工艺要求

1)橄榄油烧热,放入牛肉碎炒成棕褐色,加胡萝卜碎 洋葱碎(80克)炒香,再加番茄碎(80克)番茄酱 面粉和大蒜碎(20克)炒匀,倒入布朗基础汤煮沸,加香叶和百里香,加盖煮两个小时后,用盐和胡椒粉调味,制成肉酱少司。

1)将鸡骨 胡萝卜 洋葱 西芹和韭葱切成大块。丁香嵌入洋葱内。

2)将鸡骨放入锅中,加水煮沸,转入小火保持微沸,撇去浮沫和浮油,倒入胡萝卜 洋葱 西芹 韭葱 香叶和百里香,煮两个小时后过滤即成。注意事项

主料:南瓜1千克 韭葱碎50克 洋葱碎50克 大蒜碎10克,白糖25克 香叶 百里香适量 法香10克 辅料:白色基础汤250毫升 牛奶150毫升 调料 :黄油50克 蛋奶油 盐和胡椒粉适量,操作步骤和工艺要点

1)南瓜切片,将韭葱 洋葱 和大蒜炒软,加南瓜炒匀,加汤煮沸,加香叶和百里香煮40分钟。

2)将汤搅细,过滤后加牛奶和淡奶油,煮沸后调味

3)将汤装入热汤碗中,撒上法香末 淋上淡奶油即成。

卡布纳拉面

实验目的;了解意大利面的种类,掌握白酱意大利面的制作方法。实验配方;主料;意大利面180克(煮好的),洋葱30克,培根40克,白蘑菇50克。

配料;淡奶油120克,鸡蛋黄一个,调料;白葡萄酒20毫升,法香末1克,鸡粉2克,盐和胡椒粉适量。实验步骤; 1.将培根切条,洋葱切丝,蘑菇切片,蛋黄加奶油调散。2 锅中入色拉油烧热,然后加入洋葱丝炒香加入培根,蘑菇炒香后加入白葡萄酒,收干汁,加入意大利面。3 在加入盐 胡椒粉和鸡粉调味。离火加入调和的蛋黄酱,然后装盘即成。

注意事项;蛋黄先加奶油调散,待面离火后在加入搅匀,以免蛋黄凝结成蛋花,影响成菜效果。

法式土豆浓汤

实验目的;了解西餐浓汤类菜肴的制作方式,掌握土豆浓汤的制作技巧和要领。

实验配方;主料;韭葱200克,洋葱200克,土豆400克。辅料;白色基础汤1升,牛奶100毫升。

调料;黄油60克,淡奶油50克,盐和胡椒粉适量,法香1克。

操作步骤;1 韭葱洋葱切丝,土豆切成薄片。

黄油烧化放入韭葱和洋葱丝炒软,加土豆片炒匀,加汤煮30分钟。

将汤搅成茸汤,过滤后加入牛奶和淡奶油,再次煮沸,用盐和胡椒粉调味。

实习目的;了解意大利面的种类,掌握清淡类意面的制作方法。实习配方;主料;意大利面(煮好的)180克,青芦笋30克,鲜虾仁70克。

辅料;特级橄榄油25克,白葡萄酒10毫升,香芹叶5克。调料;海盐2克,海鲜素1克,黑胡椒粒0.5克。实训步骤; 1 青芦笋切段,香芹切碎。锅中加入10克橄榄油,烧热加入芦笋段和青虾仁炒香,加入白葡萄酒收干,加入烫好的意面搅拌均匀。加入海盐和海鲜素调味

香芹末 15克的橄榄油搅拌均年匀。4 装盘,表面撒上黑胡椒粒即成。

注意事项;火力不要太旺,以确保橄榄油和芦笋鲜香。

咖喱鸡肉饭

实训目的

了解咖喱菜肴的种类,熟悉咖喱风味酱汁的制作。实训配方

主料:净鸡胸肉或鸡腿4只(1200克)咖喱粉20克 姜黄粉10克 洋葱碎 柠檬汁 色拉油各20克。辅料:黄油米饭 橄榄土豆 和时鲜蔬菜。

调料:橄榄油 40毫升

洋葱碎100克 苹果碎100克 柠檬20克 面粉20克,咖喱粉20克 鸡汤适量

番茄碎100克,大蒜碎20克,芒果酱50克 香蕉块100克,香叶百里香三适量 淡奶油100毫升 鲜椰浆300克,盐胡椒粉适量。实训步骤

1鸡肉切块,加咖喱粉等主料搅拌均匀。

2取出鸡肉后煎香,加洋葱碎和苹果碎炒香,加咖喱粉炒匀,倒个入腌鸡肉汁和鸡汤煮沸,加入番茄碎等原料,焖煮40分钟。3将鸡肉煮沸后取出,汁中加土豆和香蕉入味,倒入淡奶油和椰浆,煮沸后出成咖喱少司。

4将鸡肉装入热菜盘中,淋上少司,旁边加黄油米饭和时鲜蔬菜装饰。注意事项

上述做法不仅适用于鸡肉,还可用于牛肉 猪肉 羊肉海鲜等,风味都很不错。

金牌炸鸡

实训目的:熟悉西餐中过三关的方法,掌握炸制的火候。

原料:净鸡胸肉4只、格律耶尔芝士8片、生火腿8片、面粉80克、鸡蛋两个、面包粉150克。

辅料:柠檬片、番芫荽适量、黄油煎薯片和时鲜蔬菜

调料:黄油80克、花生油100毫升、洋葱40克、布朗少司200毫升、盐和胡椒粉适量。

操作步骤:

1、把鸡蛋打散,加花生油、盐和胡椒粉搅匀。

2、将鸡肉拍平,用刀平片成连刀片。依次放入火腿片、芝士片和火腿片,将鸡肉合拢定型,分别粘上面粉、鸡蛋、面包粉,压紧实后,用刀背在鸡肉表面压出交叉的网络纹路备用。

3、煎锅加黄油和花生油烧热,放入鸡扒煎制。至两面成金黄色,熟透后取出,保温备用。

4、将少司淋入热菜盘中,放上煎香的鸡胸肉,配黄油煎薯片和时鲜蔬菜等即成。

注意事项:煎鸡胸肉的油温宜低,否则面包粉易焦糊。也可用150摄氏度的油温炸制,熟透即可。

火焰香蕉

实训目的:熟悉西餐水果甜品的制作,掌握火焰煎制类菜肴的烹制技巧。

原料:去皮香蕉8根 辅料:杏仁片20克

调料:黄油80克、白糖80克、朗姆酒100毫升 操作步骤:

1、香蕉剥皮,对剖成两半

2、锅中加黄油烧热,放白糖炒成棕黄色糖浆,放入香蕉煎制,加朗姆酒点燃。

3、装盘淋汁,撒上杏仁片即可。

注意事项:煎制香蕉的时间较短,以粘匀糖浆和黄油香味即成。

芥末猪扒

实训目的:了解猪扒类菜肴的烹制特点和制作工艺;掌握芥末少司的制作方法。

主料;猪柳肉4块(150克块),洋葱碎50克 辅料:土豆泥适量 调料:黄油40克、花生油20毫升、白葡萄酒100毫升、布朗基础汤200毫升,法式第戎芥末酱10克、酸黄瓜丝50克、盐和胡椒粉适量。

操作步骤:

1、将芥末酱稀释

2、锅中加油烧热,猪柳肉撒盐后,煎上色取出保温备用

3、锅内加洋葱碎炒香,倒入白葡萄酒煮干,加布朗基础汤煮沸;加酸黄瓜丝和芥末酱拌匀,调味成芥末汁。

4、将土豆泥放入热菜盘中,淋上少司放入猪排即成。注意事项:芥末酱先用布朗基础汤稀释,再加入少司中,这样容易调匀。

蜜汁烤鸡翅 实训目的:熟悉西餐烧烤类菜肴的制作方法。主料:鸡翅1000克

调料:蜂蜜50克、番茄酱30克、酱油10克、姜5克、蒜10克、葱20克、辣椒粉10克、葡萄酒100毫升、盐和胡椒粉适量 操作步骤:

1、将调料放入碗中调匀成蜜汁烧烤酱。

2、将烧烤酱和鸡翅拌匀后冷藏腌制1-2天,入味后取出。

3、将鸡翅送入160度的烤箱内烤制,成熟后取出,成菜装盘即成。

注意事项:烤制时间不宜过长,以免鸡翅干硬。

黑胡椒牛排

实训目的:熟悉牛扒的加工技术,掌握牛扒的成熟度的火候和胡椒少司的制作方法

实训配方: 主料

牛柳150克

配料

薯条和时鲜蔬菜适量 调料

黄油20克 洋葱碎20克 粗胡椒粒40克 白兰地酒20毫升 白葡萄酒50毫升 布朗基础汤200毫升

淡奶油50毫升 盐和胡椒粉适量 实训步骤:

第一

将牛柳排松 粘匀胡椒碎备用

第二

煎锅中加黄油烧化 牛柳撒盐后放入油中 煎香 上色

取出保温备用

第三

锅中加洋葱碎 胡椒碎炒香 倒入白兰地酒点燃 烧出酒香味 加白葡萄酒浓缩 酒汁煮干后倒入布朗基础汤煮沸 加淡奶油再次浓缩 用盐和胡椒粉调味 离火加黄油搅化 成胡椒汁 保温备用 第四

盘中淋上胡椒汁 放入牛柳 配黄油煎薯片和时鲜蔬菜即成。注意事项

牛柳煎制前才撒盐,否则会损失牛肉的肉汁 影响原汁原味的风味

法式脆炸香蕉

实训目的:熟悉脆炸糊的制作方法 实训配方: 主料:香蕉500克

脆炸糊:.面粉100克 鸡蛋黄1个

盐2克 啤酒100毫升

沙拉油20毫升,鸡蛋白3个,糖粉20克 脆浆:面粉200克 水250毫升

盐少许

鸡蛋1个 发粉15克 生油50克。

做法:1水慢慢的加入面粉中搅匀,加鸡蛋和发粉,放置10分钟,待发粉起作用后,加入生油搅拌好即成,2可以用啤酒代替水可以用打起的蛋白代替鸡蛋

白脆浆:面粉800克

生粉200克

泡打粉50克

鸡粉40克 盐6克

鸡蛋2个蛋黄4个 水 1200毫升 油20克

黄脆浆:水850毫升 鸡蛋600克 面粉150克 生粉900克 油900克吉士粉450克 泡打粉30克 鸡粉40克。操作步骤 鸡蛋白加糖粉打泡,香蕉切块。2将面粉等原料搅匀后即成脆浆糊

3香蕉挂糊后放入热油中炸制,待炸成金黄色后取出,撒上糖粉上菜即可

注意事项:注意粘裹浆糊的手法宜快,以免脱浆 啤酒烩鸡

实训目的:学会啤酒烩肉的方法。实训配方

主料:净鸡胸肉或鸡腿肉4只(1200克)辅料:炸薯条

煮意大利面 时鲜蔬菜

调料:洋葱碎40克 金酒25毫升 啤酒750毫升 面粉40克 蘑菇100克 淡奶油75毫升 盐和胡椒粉适量。实训步骤

1鸡肉改刀成块,洋葱切碎,蘑菇用黄油炒香

2黄油烧热。放入鸡肉煎定型,加洋葱炒香,加金酒点燃,加啤酒煮沸,调味后焖煮四十分钟。

3鸡肉煮软后取出,将淡奶油放入烩肉汁中煮愁,放入蘑菇烩入味。离火加黄油搅化成少司。

4将鸡肉装入热菜盘中,淋上少司

配薯条等辅料装盘即成。注意事项:焖煮时用小火,煮出啤酒的苦味。

火腿甜椒披萨的制作

面团:面粉2.5千克

橄榄油160克

酵母16克 盐10克

气泡水1.5升 披萨番茄酱的制作

配方:番茄900克

灌装番茄酱100克

盐2克 阿里根奴5克

黑胡椒粉1克 蒜粉2克 法香5克 橄榄油适量 制作:1将番茄去皮后 捣成泥,再倒入热油中熬制浓稠,加入灌装番茄酱和法香搅拌均匀,最后加调料混合均匀即可。馅料(150克面饼)

配方:红椒丝70克

青椒丝30克

洋葱丝20克

火腿丝20克

鸡肉丝20克 香料粉2克

芝士30克,各种原料切成丝(二粗丝)即可,鸡肉可略炒断生,先将酱料抹在饼皮上,在将辅料一次摆放在上面,最后撒上香料粉和芝士。烤制:面火270度 底火240度 约12分钟

虾仁田园披萨

番茄土豆泥

配方:土豆800克

灌装番茄酱200克 盐5克 阿里根奴5克 胡椒粉1克 蒜粉2克

植物油适量

制作:1土豆煮软,去皮 制成泥,再倒入热油中略炒

2加入灌装番茄酱和法香搅拌均匀,最后加调料混合均匀即可。

馅料

配方:虾仁70克

鸡腿肉30克 蘑菇30克 胡萝卜15克 青豌豆15克 玉米粒15克 芝士30克 香料粉适量。

制法:将虾仁 鸡腿肉 蘑菇 胡萝卜 切成丁,可将虾仁和鸡腿肉炒断生,再与青豌豆 玉米粒 胡萝卜丁混合即可 烤制:面火270度 底火240度 约12分钟

鸡肉沙律

主料;鸡胸100g,土豆丝100g,胡萝卜10g,青豆5g ,配料;小番茄20克 蛋黄酱25克

芝麻叶20克 茴香1朵。

做法;1.取一个碗,将煮好的鸡胸肉撕成丝,放入碗内。

2.将胡萝卜切成丝,小番茄切片,放入碗内。

3.将青豆煮熟过凉待用。

4.土豆切细丝放入油中炸金黄色(油温不易太高)

5.将1-4的做完的东西都放到一个碗里,在加上蛋黄酱,拌均匀,芝麻叶垫盘底,即可。

6.最后用茴香点缀。

香煎银鳕鱼

主料:银鳕鱼150克

意大利贝壳面 50克

调料:柠檬半个

熟杏仁片50克

洋葱碎10克 甜椒碎10克 白葡萄酒15毫升

白兰地15毫升 黄油30克 淡奶油30克

盐10克

鸡粉10克

操作流程:1锅中加色拉油烧热,加洋葱碎炒香,在喷入排葡萄酒略煮,然后挤一点柠檬汁,加入胡椒粉,鸡粉调味,在倒入淡奶油烧开在加入熟的杏仁片,打入黄油制成杏仁黄油汁。2.将鱼用鸡粉 胡椒粉 柠檬汁 白兰地酒腌制3~4分钟 3锅中加色拉油,将鱼粘上面粉下锅煎成金黄色.4.意大利贝壳面煮好后,放入法香碎

甜椒碎 盐 淡奶油拌匀

地中海鲜虾串 原料

主料:虾仁 洋葱

红椒

青椒

菠萝

辅料:番茄 法香 调料:辣椒粉 制作流程 将青椒 红椒 洋葱 菠萝切成三厘米左右的块。

2以洋葱 青椒 红椒

虾仁 洋葱 青椒 红椒 虾仁 菠萝的顺序串成串 表面撒少许的香料盐,冷藏保存。将虾串取出,放入热油中煎香,放入烤箱或微波炉中加热成熟即可

生姜碎10克 大蒜碎30克 咖喱粉40克 青咖喱酱20克 姜黄粉20克

柠檬汁10克 芝士粉20克 法香40克 白葡萄酒100毫升 盐和胡椒粉适量。

少司:黄油40克 洋葱碎100克 苹果碎100克 咖喱粉20克 面粉20克 布朗牛肉汤400毫升 淡奶油100毫升,腌肉料适量 配菜:黄油米饭 苹果碎 青椒碎 红椒碎 葡萄干等 制法

初加工:先将鸡肉 红甜椒 青甜椒

洋葱 菠萝分别切成3厘米大的块,再把鸡肉块和腌肉料充分混合、搅匀。用特制的烧肉针将鸡肉块、红椒块、青椒块、洋葱块和菠萝块依次穿成整齐的串烧,送入冰箱中冷藏6h备用。

主料烹制;将腌好的鸡肉串烧取出,放入热油中煎制。待表面上色、出香味后,送入烤箱中(或是微波炉内)加热至熟后,取出保温备用。少司制作:煎锅中加黄油烧热,加入洋葱碎和苹果碎炒香,在加咖喱粉和面粉炒匀,最后加番茄碎和布朗牛肉汤煮沸,倒入阉鸡肉料。调味后,加淡奶油浓缩即成少司。

什锦米饭:将黄油米饭、苹果碎、青椒碎、红椒碎和葡萄干等放入锅中炒香,调味后成什锦米饭。装盘;将煎好的鸡肉串烧放入盘中,淋上少司,配上什锦米饭,上菜即成。注意事项

1)没有特制的烧肉针,也可以用平时做烧烤的长竹签代替。2)鸡肉串烧在加工成型后,最好腌制一段时间,入味才均匀。一般可以提前制作,冷藏腌制,需要用时即取即用,方便操作。3)家庭制作时可以用微波炉代替烤箱,成品的风味同样很独特。4)以上的做法同样可以应用于别的原料,入:串烧猪柳、串烧牛柳、串烧羊柳、串烧海鲜,等等。

牛清汤

主料:牛肉馅(纯瘦肉)

配料:洋葱 胡萝卜

芹菜

香叶

黑胡椒

鸡蛋清 操作步骤: 1.蔬菜切片加入肉馅,再加入香叶和黑胡椒粒,鸡蛋清2个每斤左右。用手搅上劲,夹肉适量的盐和胡椒粉。

2.加入冷水,上火,大火烧开,小火煨,刚开始的时候可以搅动一下,等肉馅都浮起来停止搅动。

3.加入一些煎上色的洋葱在汤中,使汤上颜色。

洋葱汤

主料:洋葱

牛肉清汤

辅料:蒜茸

百里香

干红葡萄酒

香叶 操作步骤: 1.洋葱切丝,锅中做油加香叶 百里香 少许蒜茸 加洋葱丝炒至上色。

2.加入干红葡萄酒,收干后加入牛肉清汤,烧开,最后加盐 胡椒粉 糖调味即可。

芝士面包片:奶酪碎 蛋黄搅拌均匀,均匀的涂抹在面包片上,入焗炉中烤制上色即可.早餐煎蛋类制作 可分为:

一面煎蛋:煎制蛋清凝固即可,不管蛋黄。双面煎蛋:底面煎好后翻面。另一面煎制能动即可。鸡蛋卷:

配料:鲜口蘑 火腿 芝士粉 洋葱 西红柿

青红椒

操作步骤:

1.鲜口蘑切片

其他切粒备用

2.将馅料放入锅中炒香,一般为两个鸡蛋一个蛋卷,倒入后迅速搅匀,成型后不可搅动,然后卷成卷,略煎即可。

培根碎 操作步骤:

1酸奶油:柠檬汁加奶油搅打

培根碎:培根切丝煸出油即可

瑞士土豆丝

原料:洋葱 培根 土豆 黄油 操作步骤:

1.土豆煮熟,搓成粗丝(做好提前一天煮好,放在冰箱里,现用现拿。

2.锅中放黄油,把培根炒香加入洋葱粒炒香,放入土豆丝,加盐,煎制金黄色,翻面同样煎制金黄色即可。
