宴会口译

I.宴会口译前的准备

口译员工作需要出席的宴会场合和规模各不相同,可能是非常隆重的晚宴,大型的招待会,也可能是小型的工作便餐。虽然大部分宴会都很正式,但是相对会谈和会议来说,宴会的气氛更加轻松活跃。

宴会具有很重要的礼仪作用,有严格的礼仪要求。宴请宾客是一种较高规格的礼遇,所以在宴会上的口译员一定要认真、周到地做好各种译前准备工作。首先,要了解参加宴会的有哪些人,主人和宾客的姓名、职务、称呼、身份、国籍等;其次译员也要了解举办宴会的主要目的,是为表示欢迎、答谢,还是为表示庆贺、纪念等等。最后,译员要知道宴会的形式,是正式宴会,还是冷餐会、酒会、茶会等其他形式。

II.宴会中的礼仪及致辞

宴会口译员必须注意宴会中的礼仪。具体礼节如下:主人陪主宾进入宴会厅主桌,接待人员引导其他客人入席后,宴会即可开始。宾客在服务人员的引导下入座,译员要注意在自己的座位入座,不要坐错了位置。入座之后,坐姿要自然端正,不要往后倒靠在椅背上;肘不要放在餐桌上,不要托腮;眼光随势而动,不要紧盯菜盘。

正式宴会一般都有致词和祝酒,但时间不同。中国的宴会习惯是在开宴之前讲话、祝酒、客人致答词。在致词时,全场人员要停止一切活动,聆听讲话,并响应致词人的祝酒,在同桌中间互相碰杯。西方国家致词、祝酒习惯安排在热菜之后,甜食之前,至于冷餐会和酒会的致词则更灵活些。在宴会正式开始前,译员要口译一些致词比如

“今天,我们举办宴会,款待各位朋友,旨在创造契机增进双方商务人士之间的了解和交流。”

“Today, we hold this banquet to entertain our dear friends, our aim is to create an opportunity for the businessmen of the two sides to improve understanding and exchange.” 译员要提前准备一些祝酒词,这样在口译时才能从容不迫。

“各位能够赏光到此,我感到非常荣幸,让我们举杯,祝愿此次合作圆满成功!并祝愿我们友谊常存!干杯!”

“I consider it a great honor to have you all here.Let me propose a toast, and wish the cooperation a complete success.May our friendship last forever!Cheers!”

然后,再请大家用餐, “我们今晚准备了中国式的酒菜,希望各位都会喜欢。”

“We have prepared a Chinese meal for this evening, I hope you will all like it.”

主人拿起餐巾后,译员方可拿起餐巾,打开放在腿上,千万不要别在领口或挂在胸前。餐巾是用来防止菜汤滴在身上和用来擦拭嘴角的,不可用来擦餐具,更不要用来擦脖子抹脸。进餐过程中口译员要时刻注意,当有人讲话时要将食物咽下并坐好,然后开始翻译。边吃边谈是宴会的重要形式,话题要轻松、高雅、有趣,不要涉及对方敏感、不快的问题。口译员得负责全桌人的交谈翻译,当然主要对象是宴会的主人和主要嘉宾。在宴会上,口译员一般不能够做笔记,所以应着重传达意义。当然,译员要向外国友人介绍一下菜肴,比如, “这是中国式的冷盘,请大家随便用。” “Here are Chinese cold dishes, please help yourselves.” “请多吃点烤鸭。”

当宴会上出现冷场时,口译员也可以根据实际情况灵活提出一些不敏感的话题,如菜肴的风味

“中国的烹调丰富多彩,色、香、味俱全。” “Chinese cooking has many varieties.That makes it perfectly wonderful in appearance, smell, and taste.”

“您是喝红酒还是白酒呢?这里有王朝和茅台。”

“ Would you like wines or spirits? We have Dynasty and Maotai spirits.”

同时把内容告诉另一方,以便双方能够继续谈下去,自己则退到担任翻译的角色,这些做法都会使宴会的气氛更加活跃。以上为译员在整个宴会中作用说明，下面将主要总结祝酒词主要内容和常用句式：

1.Addressing the Party

The usual way to begin a toast is for the host to address the guest or guests of honor first and then the rest of the party in his fashion:

口译的标准不同于笔译的标准“信”、达”、“雅”,在宴会或餐桌上口译时,译者没有时间咬文嚼字,反复推敲,很难使译文达到“雅”的境界。但应保证“信”和“达”,换句话说,就是要保证准确、通顺。对中式菜肴名称的即席翻译,要求口译者做到准、顺、快,否则若译者字斟句酌,结结巴巴地译出来,恐怕菜都要凉了。

中式菜肴名称五花八门,不管何种菜肴名称,在翻译时都要直入主题,开门见山地点明菜肴是由什么原料做成的,烹饪方法是什么。口译时,如果时间允许,根据情况的需要,可适当地把某些菜的营养价值、风俗民情、历史传说等对客人作些介绍,额外撒点“文化作料”,不仅能提起外国客人的食欲,也能达到活跃气氛和传播中国饮食文化的目的。

口译要求准确、快捷,这就需要口译者对口译内容事先作一定的准备,以免临场发挥时卡壳。准备得越充分,口译时心理压力就越小,要做到有备无患。

口译前,我们可进行如下两种准备:首先是主题准备,口译前译者应了解和熟悉口译主题,包括专业知识和百科知识。

对所译主题具备基本知识,是即席翻译时迅速理解所译内容的条件和基础。

就英译中式菜肴名称这一主题的准备,我们可事先研究和分析中式菜肴名称的类型和组成结构。在主题准备中可查资料或向专业人员了解烹调方面的知识,如有哪些常用的调料、烹饪方法、刀功以及菜名的相关文化背景知识、典故传说、风土人情等。

这些主题准备可让口译者在口译现场准确理解文化负载较重的中式菜名的文化内涵。

其次是语言准备。译者可建立术语库、词卡,并找到英语中对应的词汇和表达方法,比如:烹饪方法主要包括

simmering(炖、煨)、stewing(煲、炖、焖)、braising(烧)、frying(煎、炒)、boiling(煮)、baking(烘炸)、steaming(蒸)、smoking(熏)、scolding(白灼)、stuffing(酿)等。

刀法主要包括: slicing(切片)、shredding(切丝)、filleting(切柳)、dicing/cubing(切丁/块)、grinding(磨/碾碎)、mashing(捣烂)等。

调料主要有: 各种酱,如

brawn sauce、white sauce、tomato sauce,还有onion and ginger(葱姜)、sesame oil(麻油)、Monosodium glutamate(味精)等。

口味主要有chilly(辣味)、spicy and hot(麻辣)、sour and sweet(酸甜)等。

做好以上两项准备,就可以胸有成竹地进入口译现场,根据现场的具体情形,灵活变通地对不同类型的菜肴名称采取不同的翻译方法。中式菜肴名称的类型及翻译方法

要对中式菜肴名称进行英译,首先要了解它的命名方式和类型。中式菜肴名称按命名方式可分为:普通组合型和文化型。普通组合型的名称直接把烹饪要素进行组合而成。烹饪要素主要包括:原料、烹饪方法、调料、刀法、口味。比如:炒肉丝:烹调方法+原料+刀法,咖喱牛肉:调料+原料,青椒肉丝:原料+原料+刀法,辣味烩虾:调味方法+烹饪方法+原料等等。

普通组合型名称的原料和烹饪方法一目了然,然而文化型名称却很含蓄、隐晦,看其名称,却不知所指。原来,中菜命名常使用多种修辞手法,并富含文化背景,有以典故、传说来命名的,如霸王别姬、八仙过海等;有以形象比喻来命名的,如翡翠虾仁,龙虎斗等;有以姓氏、人名命名的,如东坡肉、毛氏红烧肉等;也有以地名命名的,如重庆火锅等。基于这两种菜肴名称的不同类型和特点,可采用不同的翻译方法。

2·1直译法

此法可用于对普通组合型菜肴名称的翻译,直接译出其组合元素,以主要原料为中心词,其他组合元素如烹饪方法、调料、口味、刀法为修饰成分。

修饰成分以过去分词或介词短语的形式出现,口味和调料常以介词短语的形式出现,翻译菜名的常用介词有with和in。

烹调方法和刀法常以过去分词的形式出现。如: 红烧鱼(烹饪法+原料):braised fish in brawn sauce 冬菇菜芯(原料+原料,冬菇为主要原料):winter mushroom with green cabbage 青椒肉丝(主要原料+辅助原料+刀法):shredded pork with green pepper 怪味鸡(口味+原料)multi-flavored chicken/wonderful taste chicken

译者在译前通过准备工作对烹饪方面的词汇和英语表达已贮存在脑海里,对于普通组合型菜名的翻译,译者只需根据实际情况将贮存的信息元素进行组合。而对于文化型菜肴名称的处理则较为复杂,翻译方法也更灵活多样。

2·2意译

中式菜肴名称讲究“雅”。许多原料做成菜以后,便以行话、隐语出现,这时只需用意译法将其涉及的原料和烹饪法介绍给客人。如: 炒双冬:fried sauté winter mushrooms and winter bamboo shoots

三鲜汤:soup with fish, shrimp and pork balls

中式菜讲究色、香、味,许多菜肴名称采用比喻法描绘生动的形象。如果直译,外国客人听了会莫明其妙,不如舍形求意。如: 翡翠虾仁(青豆被喻为翡翠): stir-fried shrimps with peas 积雪银钟(银耳被喻为积雪,蘑菇被喻为银钟):stewed mushrooms with white fungus 蚂蚁上树: sautéed bean vermicelli with spicy meat sauce

2·3直译+解释或增词直译

中国家喻户晓的姓氏、人名,对于来自不同文化的外宾来说,需增词说明来帮助理解。人名前最好增加头衔或职业的说明。如: 东坡肉:poet Dong Po’s braised pork 毛氏红烧肉:Chairman Mao’s stewed pork with soy sauce

对于那些知之甚少或译出后外宾不能理解的,则去人名加味型。如:

麻婆豆腐:bean curd with minced pork in hot sauce

直译+解释的方法可以用于翻译地名型菜肴名称。

中国地方菜肴自成体系,各有风味。中国人能从地名型菜肴名称中理解它所代表的风味,外国客人从地名的直译中不能理解其风味,此时采用直译+解释有利于向外国客人传播丰富多彩的中国饮食文化。如:

北京烤鸭:Beijing roast duck,然后解释一下Beijing food is heavy and spicy。

成都子鸡: stir-fried spring chicken, in Chengdu style,然后解释Sichuan food is characterized by strong flavour.It’s spicy and hot。

直译+解释也可用于典故、传说型菜肴名称的翻译。如: 叫花鸡:可先直译为Beggar’s chicken,然后解释它的典故传说:There’s a legendary story connected to it.Long long ago there was a beggar.One day he stole a chicken and was pursued by the owner.He was almost caught when he suddenly hit upon a good idea.He smeared the chicken all over with clay, which he found nearby and threw it into the fire he had built to cook it.After a long while the beggar removed the mud-coated from the fire.When he cracked open the clay he found, to his astonishment, that the clay together with the feather had formed a hard shell in which the chicken had been baked into a delicious dish with wonderful flavour.That night he had a very enjoyable meal.Hence the name of the dish.许多菜肴的名称源自迎合图吉利和喜庆的文化心理,如全家福、龙凤配。对于该类型的名称,也可先直接按中文菜名译出其意,然后再补充说明其内在含义。如: 全家福:happy family—a combination of shrimps, pork, beef, chicken and mixed vegetables with brown sauce.2·4归化译法

用西方人熟悉的欧洲菜名来译部分中菜名。因为它们之间有很多相似之处,译文地道,通俗易懂,能收到事半功倍的效果。如: 烧排骨:barbecued spare ribs 鸡肉串:Teriyaki chicken stick 译者的跨文化意识

口译实际上是一种跨文化交际,译者要有较强的文化意识,才能使译语地道、明白,达到交际的目的和效果。译者不仅应有双语能力,更应有双文化的能力。有人将口译称为“文化口译”,提出重视口译的文化因素,仅仅进行语码转换,而忽视文化因素,往往达不到沟通双方交流的作用。口译中式菜肴名称,实际上是向外宾介绍中国的饮食文化,在这种特定场合中,译者的跨文化意识体现在以下三方面: 3·1学习饮食文化

译者要了解源语文化,即汉文化和少数民族文化。译者要学习中国的饮食文化,对文化型的名称要知道其文化背景知识,理解该名称真正所指的原料和烹饪方法,并适时适当地向外国客人介绍中国的饮食文化。

3·2了解宾客对我国文化的认知程度

译者对在场的外国客人的认知文化语境要有所估计,从而确定采用的翻译方法。译者凭借自己的敏感性来判断,什么情况下直译外国客人会因文化缺省而产生理解障碍,如人名、地名、比喻型、典故型名称往往要借助文化背景知识才能理解,这时必须在直译的基础上增加解释说明,对外国客人头脑中的文化空白和缺省进行填补,把源语文化输入到译语文化中,真正起到促进文化交流的作用。

3·3积极参与文化交流

交际中的口译者不仅仅是语言的中介,而且是积极参与的一方,译者有责任和义务促进交际双方的理解和沟通。在某些情况下,口译者应利用自己的双文化知识,向不了解对方文化的交际方解释文化差异和可能出现的误解。比如,在宴会中译者可在中方人员点菜时,提醒中方有关人员注意外国客人文化中出于民族心理和宗教等原因所忌讳的食品,如狗肉、猪肉、动物的内脏、头、足等,以避免不必要的误会。

总之,要较好地完成对中式菜肴名称即席口译的任务,译者在译前要进行充分的准备,了解和熟悉一定的行业术语及其相应的英语表达法,了解相关的饮食文化背景知识。在临场发挥时灵活运用翻译策略,利用自己的双文化能力,促进交际方的理解和沟通,适时地向外国朋友介绍中国的饮食文化。

宴会口译礼仪，第一步是早到。熟悉现场，知道每张桌上都坐着谁。一定要事先把双方人员的名字、职位都背下来。然后找准宴会的主人和主宾，争取在会前听他们聊聊，以了解他们的语言习惯、双方是否友好熟悉等。

衣着上以庄重、正式为佳。男士就是西装，女士可以穿西服套装，或者正式一点的裙装也可以。但是女士千万不要太随意，也不要太漂亮。因为宴会上可能会有别的女宾客，抢风头是很不礼貌的。如果是正式的服装，就没人嫌你太漂亮了。

饭桌上千万不要去拿筷子。因为他们随时可能开口，你放下筷子的一瞬间，一秒钟过去了。一秒钟可以说一句话了。所以，会前自己先吃好、喝好，不要对饭桌上的任何东西“动感情”。如果客户对你说，“你也吃点！”不要当真，他们不会真的停下来等你。（我自己遇到过，市委书记让我喝口汤。我刚拿起勺子，他又开口了。）

坐姿端正，不要摇摆。基本上把肩膀往后压，腰背挺直，就端正了。头稍微低一点，不要跟着客户笑。你的神情要比客户稍微正式一些。

总之，一切以稳重为宜。
